Deb's Secrets for The Best Jerk Chicken

Deb is a good friend of mine and when we are together we talk about food and cooking! I just love how she explains a recipe. She always has secrets to making the dish better than any other. She is the best! So here are the tricks to making this chicken so darn good!

  1.  First you need to wash the chicken in vinegar. Deb says traditionally its important to wash your chicken to clean and to tenderize the meat. I put the chicken in a bowl and then added 2 tbsp. vinegar and gave it a wash, drained the vinegar rinsed the chicken in water and then pat it dry with paper towels.
  2. Secondly, the seasoning! Deb says that using a jerk paste and jerk seasoning together is very important. Deb recommends using the Walkerswood Jamaican Jerk Paste. They have it in hot & spicy and also mild. The hot & spicy is vey hot so judge your heat tolerance by that. The second seasoning that Deb uses for this recipe is Cool Runnings Jamaican Jerk Seasoning Powder. I live in Canada and was able to find both of these spices at Freshco.
  3. Deb recommends letting the chicken marinate overnight or 24 hours for the best results.
  4. Deb likes to use chicken thighs and chicken legs for the best flavour.

Pictured below is my friend Deb. Deb was born in Kenya, Nairobi and lived there most of her life. A good part of her family lives in the Seychelle Islands. I have a whole article on the Seychelle Islands and the homemade curry spice that Deb gave me. A shared family tradition of making and sharing homemade curry powder spice.
