I became intrigued by street corn or Elote after watching an episode of The Chef Show on Netflix featuring John Favreau and Chef Roy Choi. They made it on an episode and it looked so simple and delicious! I had to make it!

My family loves this dish and likely one of the most favourited dishes that I make!

Secret Ingredient : Mayo Sauce Mix

The real star of the show here is the Tajin Clasico Seasoning.

Take a simple mayo spread to the next level! This blend is slathered on at the end of grilling the corn and prior to sprinkling parmesan cheese. It is made with a blend of mayonnaise, chili powder, tajin lime seasoning, garlic, chipotle sauce and lime.

It is a perfect spicy blend of Mexican happiness! It is also good for a salted rim for a margarita!

Ingredients:

  • 6 ears of corn, husked and cleaned
  • 1/2 limeĀ 
  • 1/2 cup of mayonnaise
  • 1 tbsp. chipotle pepper sauce
  • 1 tsp. chili powder
  • 1/2 tsp. tajin seasoning
  • 1/2 cup of grated Parmesan cheese
  • Salt and pepper to taste

Instructions:

  1. Boil the corn: Fill a large pot with water and bring it to a boil. Add the corn and let it cook for 5-7 minutes, until tender.

  2. Grill the corn: While the corn is boiling, preheat your grill to medium-high heat. Remove the corn from the pot and pat it dry. Brush the corn with olive oil, salt and pepper.

  3. Mix the sauce: In a small bowl, mix together the mayonnaise, tajin, chipotle sauce, lime juice, chili powder, salt, and pepper.

  4. Grill the corn, turning until all the sides are slightly charred on all sides. Remove from the grill.
  5. Coat the corn: Using a brush or spoon, coat the grilled corn with the sauce mixture. Sprinkle the grated Parmesan cheese on top of the corn.

  6. Serve and enjoy: Serve the Mexican street corn hot off the grill and enjoy as a delicious appetizer or side dish!

Tip: For a twist, you can also add chopped fresh cilantro or green onions to the sauce mixture. And if you don’t have a grill, you can also broil the corn in the oven for a similar charred effect
