Bring home the unique flavours of Greek Chicken Gyros to Chicken Shwarma’s with this awesome must-have Spit-Roasting pan. This super easy cooking method allows you to replicate the traditional flavours of a vertical spit-roasted recipe right in the cozy confines of your home kitchen.
Marinate your chicken with a Greek theme or Arabic theme by the spices! Both methods of marinating require the same ingredients only I like to add in chicken shawarma spice when making my shawarma’s. Both ideas require mixing plain yogurt, oregano, lemon, paprika, cumin, garlic, and rosemary and shawarma spices.
There are 2 amazing sauces that I need to recommend here. If you are making a Greek Chicken Gyro you are going to need my recipe for Tzatziki Sauce Recipe. The second sauce recipe is for the Chicken Shawarma’s. It is a Garlic Feta Dip which I have attached below at the bottom of this blog article!
It will be wonderful! I like to serve both of these recipes with my easy Greek Smashed Potato Recipe and a Simple Mediterranean Salad.

Tips & Tricks
Here are some tips & tricks for successful roasting when using the Vertical Spit Pan.
- Marinate for Flavour: Before skewering the chicken onto the vertical spit, make sure to marinate your meat. Aside from infusing flavours, it helps the meat to remain tender while cooking.
- Use Boneless Skinless Chicken Thighs. I love the flavour you get from Chicken Thighs and they are a perfect thickness for skewering.
- Oil the Vertical Spit before skewering the meat. This will prevent sticking during the cooking process.
- Even Cooking: Position the vertical spit pan in the center of the oven and rotate it occasionally to ensure even cooking and browning on all sides of the chicken. I found that it takes a good 2 hours for the chicken thighs to be fully cooked.
- Use Aluminum Wrap for the first hour of cooking. This will prevent charring the outside too much before the inside is fully cooked.
- Use a Meat Thermometer: Be sure to check that your meat is fully cooked before removing it to the oven. For Chicken to be fully cooked it should read 165°F (74°C)
- Baste for Moisture: Periodically baste the chicken with the juices that will be appear around the bottom of the pan. Alternatively, you could baste it with some chicken, beef, or vegetable stock. I like to baste every 20 minutes if you have time.
- Rest Before Carving: Once the chicken is cooked to perfection, allow it to rest on the vertical spit wrapped in tin foil for a few minutes before carving.
Ingredients:
To make the Spit Roasted Chicken you will need:
- 1 large pack boneless, skinless chicken thighs (about 12-16)
- 1 tsp salt
- 1/2 tsp pepper
- 2 garlic cloves, minced
- 1 tbsp dried oregano
- 1 tsp. Rosemary
- 1 tsp. Cumin
- 1 tsp. Paprika
- 1/2 lemon juiced
- 1/2 cup plain Greek yogurt
- 2 tbsp olive oil
- 1/2 lemon juiced
- 1/2 cup plain Greek yogurt
- 2 tbsp olive oil
Instructions:
To a bowl, add in plain yogurt, garlic, dried oregano, rosemary, cumin, paprika, and lemon juice. Blend.
Preheat Oven to 400 degrees.
Add in your chicken thighs and marinate for at least 1 hour and up to overnight.
Oil your Vertical Spit Roasting Pan including the bottom and the spit part.
Skewer the marinated chicken onto the spit. Optional: You can place a cut onion on the top of the skewer for added flavour.
Place tin foil onto the spit and gently wrap your chicken loosely.
Bake the Greek Chicken Gyro for 1-hour covered and then 1-hour uncovered
Baste the chicken every 20 minutes using the juices at the bottom of the pan.
Using a meat thermometer make sure the inner part of the chicken reads 165 degrees for doneness. Remove from the oven and wrap with tin foil to let rest for a few minutes.

Spit Roasted Chicken For Gyros & Shawarma's: Made At Home

- 1/2 lemon juiced
- 1/2 cup plain Greek yogurt

- 1 tbsp. Shawarma Spice (For Chicken Shawarma)
Instructions

- 3/4 cup mayonnaise
- 1/4 cup red wine vinegar
- 1 garlic clove minced
- 1 tbsp. Worcestershire
- Pinch of dried oregano
- Pinch of cayenne
- Black pepper
- 1 cup feta cheese crumbled
- 2 tbsp. Water, if you need to thin it out more
Instructions
- Add all of the ingredients listed above into a food processor and blend until smooth. Serve on top of your burger or it also makes a great dip for fries!
