Spit Roasted Chicken For Gyros & Shawarma's: Made At Home

These Chicken Gyros or Shwarma made at home using a Spit Roasting Pan are absolutely delicious and easy to make. Marinate your chicken using Greek or Arabic flavours and roast in the oven for 2 hours. It is as easy as that! Grill up a pita, add a tzatziki sauce and top with lettuce, tomato and red onion. Enjoy!

Ingredients
  

  • 1 large pack boneless skinless chicken thighs (about 12-16)
  • 1 tsp salt
  • 1/2 tsp pepper
  • 2 garlic cloves pressed
  • 1 tbsp dried oregano
  • 1 tsp. Rosemary
  • 1 tsp. Cumin
  • 1 tsp. Paprika
  • 1/2 lemon juiced
  • 1/2 cup plain Greek yogurt
  • 2 tbsp olive oil
  • 1/2 lemon juiced
  • 1/2 cup plain Greek yogurt
  • 2 tbsp olive oil
  • 1 tbsp. Shawarma Spice (For Chicken Shawarma)

Method
 

  1. To a bowl, add in plain yogurt, garlic, dried oregano, rosemary, cumin, paprika, and lemon juice. Blend.
  2. Preheat Oven to 400 degrees.
  3. Add in your chicken thighs and marinate for at least 1 hour and up to overnight.
  4. Oil your Vertical Spit Roasting Pan including the bottom and the spit part.
  5. Skewer the marinated chicken onto the spit. Optional: You can place a cut onion on the top of the skewer for added flavour.
  6. Place tin foil onto the spit and gently wrap your chicken loosely.
  7. Bake the Greek Chicken Gyro for 1-1/2 hoursĀ  covered and then 1/2 hour uncovered
  8. Baste the chicken every 20 minutes using the juices at the bottom of the pan.
  9. Using a meat thermometer make sure the inner part of the chicken reads 165 degrees for doneness. Remove from the oven and wrap with tin foil to let rest for a few minutes.
