two secret steps that will make your tzatziki the best!

So how do we go about making the best tzatziki sauce that will leave your family or guests wondering how the heck you made this delicious recipe? Well here are the two secret ways to elevate your tzatziki game.

  1. Mixing Acids and Citrus
  2. Dissolve the salt and sugar into the acid before adding other ingredients.

1. Why is mixing vinegars and citrus better for your sauce?

Mixing vinegars and citrus is a great way to create a unique flavoured sauce or even salad dressing. 

Chefs often mix vinegars and citrus together to create a vinaigrette that delivers a more nuanced and balanced taste.

The general rule of thumb that I like to use is to pick 3 vinegar flavours and then 1 acid. I use 1/4 tsp. of each of my picks. You can be creative here. Trust me they will all work nicely together!

For example, I will use red wine vinegar, apple cider vinegar, white wine vinegar and then lemon juice. I will use 1/4 tsp. of each and mix together. 

Vinegar brings a tangy and slightly pungent note, while citrus, such as lemon or lime, contributes a refreshing and zesty element.

Traditional Tzatziki Recipe

The ingredients needed to make the Tzatziki Sauce are:

  • 2 cups Sour Cream or Plain Yoghurt
  • 1/2 cucumber, finely shredded 
  • Fresh Dill, chopped
  • 1-2 tsp. Oregano
  • 1 Garlic clove minced
  • 1/2 tsp. each of the following: Red Wine Vinegar, White Wine Vinegar, Apple Cider Vinegar, lemon juice
  • 1 tsp. Salt
  • 1 tsp. Agave Nectar or Honey
  • 1-2 tbsp. Olive Oil

Here’s a simple recipe with instructions to make tzatziki:

  1. Start by grating the cucumber using a box grater. Squeeze out any excess moisture.
  2. In a medium-sized bowl, start by adding the salt first and then add in all of the vinegars and lemon juice. Stir until the salt has dissolved into the acids.
  3. Add in the dried oregano, minced garlic, fresh dill, yoghurt, agave, grated cucumber and olive oil
  4. Add the extra virgin olive oil
  5. Mix all the ingredients together until well combined.
  6. Season the tzatziki with salt and pepper according to your taste preferences.
  7. Serve the tzatziki as a dip with pita bread, fresh vegetables, or as a sauce to accompany grilled meats, kebabs, or roasted vegetables

2. Tzatziki: with Labneh Recipe

For a new take on Tzatziki, try making it by adding Labneh. This is my new most favourite way of making Tzatziki. I saw this idea of putting Labneh in the tzatziki sauce in a cookbook called Zaytinya. It is a beautiful cookbook full of great recipes and awesome cooking techniques. Also, if you ever get a chance to eat at Zaytinya in Washington D.C. you will be in for a real treat!

Labneh is a type of Middle Eastern cheese made from strained yogurt. It’s known for its creamy texture and tangy flavour, and is often used as a dip, spread, or condiment. It works great because it adds the thickness and adds some additional flavour to the tzatziki. 

Here are the ingredients needed to make Tzatziki with Labneh.

  • 1-1/2 cups yogurt
  • 3/4 cup labneh
  • 1/2 English Seedless Cucumber, finely diced or shredded
  • 1 clove garlic
  • 2 tbsp. dill
  • 1 tsp. salt
  • 1 tsp. honey
  • 1 tbsp. Olive oil

This tzatziki sauce recipe is made with the secret ingredient Labneh. It is rich, thick and creamy and absolutely delicious. Great on chicken, potatoes salad and more.

Ingredients
  

  • 1-1/2 cups yogurt
  • 3/4 cup labneh
  • 1/2 English Seedless Cucumber finely diced or shredded
  • 1 clove garlic
  • 1 tsp. Dried oregano
  • 2 tbsp. dill
  • 1 tsp. salt
  • 1 tsp. honey
  • 1 tbsp. Olive oil
  • 1/2 tsp. of each: red wine vinegar white wine vinegar, apple cider vinegar, fresh lemon (for a total of 2 tsp.)

Instructions
 

  • 1. Begin my adding the cucumber to a bowl and add salt. Mix and allow to rest for 45 minutes.
    2. After 45 minutes, strain the liquid out of the cucumber using a couple paper towels or a clean dish cloth.
    3. Add plain yogurt, labneh, garlic, dill, honey, olive oil and vinegar to the cucumber. Mix well and cover. Refrigerate for up to 3 to 5 days.
