These maple roasted carrots are sweet and savoury and so easy to make. They are a perfect addition to a homestyle meal. I love to serve these with my homemade meatloaf recipe and my grandma’s famous scalloped potatoes. It is a delightful, hearty and a balanced meal. One of my favourite cookbooks is from Ina Garten: Modern Comfort Food A Barefoot Contessa Cookbook. Her recipes are straight to the point and healthy comfort food recommendations. Awesome! 

I love this recipe for maple roasted carrots because you can use staple pantry ingredients. All you will need is some carrots, butter, brown sugar, maple syrup, soy sauce, garlic, fresh thyme and salt & pepper. Mix it all together and then let the oven do the work!

Maple Roasted Carrots Recipe

Here’s the ingredients and instructions that you will need to make these delicious and most satisfying roasted carrots!

  • 2 pounds or approximately 6-7  Carrots (peeled and chopped into 1-inch pieces)
  • 3 tablespoons Unsalted Butter
  • 2 cloves Garlic, minced
  • 2 tablespoons Brown Sugar
  • 2 tablespoons Maple Syrup
  • 2 sprigs Fresh Thyme (chopped)
  • 1 tablespoon Soy Sauce
  • Salt and Pepper to taste
  1. Preheat Oven: Set your oven to 375 degrees.
  2. Prepare Carrots: Place the chopped carrots in a large bowl.
  3. Mix Glaze: In a separate bowl, whisk together the melted butter, garlic, brown sugar, maple syrup, chopped thyme, and soy sauce.
  4. Coat Carrots: Pour the glaze over the carrots and toss until they are evenly coated. Season with salt and pepper to taste.
  5. Roast Carrots: Spread the carrots out inside a rimmed baking dish and cover with foil. Roast in the preheated oven for about 40 minutes, or until the carrots are tender and caramelized, flipping them halfway through.
  6. Serve: Remove from the oven and serve warm. You can garnish with additional thyme if desired.
