Easy Maple Roasted Carrots Recipe

Buttery & sweet these maple roasted carrots are easy to make and so delicious! Serve as a side dish to meatloaf and scalloped potatoes.

Ingredients
  

  • 2 pounds or approximately 6-7 Carrots peeled and chopped into 1-inch pieces
  • 3 tablespoons Unsalted Butter
  • 2 cloves Garlic minced
  • 2 tablespoons Brown Sugar
  • 2 tablespoons Maple Syrup
  • 2 sprigs Fresh Thyme chopped
  • 1 tablespoon Soy Sauce
  • Salt and Pepper to taste

Instructions
 

  • Preheat Oven: Set your oven to 375 degrees.
  • Prepare Carrots: Place the chopped carrots in a large bowl.
  • Mix Glaze: In a separate bowl, whisk together the melted butter, garlic, brown sugar, maple syrup, chopped thyme, and soy sauce.
  • Coat Carrots: Pour the glaze over the carrots and toss until they are evenly coated. Season with salt and pepper to taste.
  • Roast Carrots: Spread the carrots out inside a rimmed baking dish and cover with foil. Roast in the preheated oven for about 40 minutes, or until the carrots are tender and caramelized, flipping them halfway through.
  • Serve: Remove from the oven and serve warm. You can garnish with additional thyme if desired.
