  3. Red Potatoes: Red potatoes have thin skins and a waxy texture, which helps them hold their shape during baking. They have a slightly sweeter flavor and are well-suited for oven-baked home fries.

Ingredients:

  • 5 cups water
  • 4 cups chopped potatoes into bite sized pieces
  • 3 bay leaves
  • 3 cloves garlic
  • 1 tbsp. Salt
  • 3 tbsp. olive olive oil
  • 2 tsp. garlic powder

Instructions:

  1. Preheat the Oven: Preheat your oven to 400°F

  2. Blanch the Potatoes: Bring a large pot of water to a boil. Add the diced potatoes to the boiling water and let them cook for about 10-12 minutes, just until they start to soften slightly. This blanching step helps to partially cook the potatoes and ensures they become crispy on the outside while remaining tender on the inside.

  3. Drain and Dry: Drain the potatoes in a colander and let them air dry for 3-4 minutes

  4. Shake and Season: In a large bowl, combine the blanched potatoes, olive oil, garlic powder, salt, and black pepper. Toss everything together until the potatoes are evenly coated with the seasoning mixture.
