Healthy Benefits of Carrots

  1. Rich in Nutrients: Carrots are packed with essential nutrients like vitamin A, vitamin C, vitamin K, potassium, and fiber. Vitamin A is vital for maintaining healthy vision, immune function, and skin health.

  2. Promotes Eye Health: Carrots are famous for supporting eye health. They contain beta-carotene, a type of vitamin A that helps protect the eyes from age-related macular degeneration and promotes good vision, especially in low-light conditions.

  3. Boosts Immunity: The high levels of vitamin C in carrots play a role in boosting the immune system and defending the body against illnesses and infections.

  4. Heart Health: The fiber, potassium, and antioxidants in carrots can help improve heart health by reducing cholesterol levels and blood pressure, thus lowering the risk of heart disease.

  5. Digestive Health: The fiber content in carrots aids in digestion and supports a healthy gut. It helps regulate bowel movements and can prevent constipation.

  6. Weight Management: Carrots are low in calories and high in fiber, making them a great option for those trying to manage their weight. The fiber also helps keep you feeling full and satisfied, reducing overall calorie intake.

  7. Antioxidant Properties: Carrots are rich in antioxidants, including beta-carotene and other phytonutrients, which help combat oxidative stress and reduce the risk of chronic diseases.

  8. Skin Health: The vitamins and antioxidants in carrots contribute to healthy skin by preventing damage from free radicals and supporting collagen production, which helps maintain skin elasticity.

  9. Cancer Prevention: Some studies suggest that the antioxidants and bioactive compounds in carrots may have cancer-fighting properties, particularly against lung and breast cancer.

  10. Blood Sugar Regulation: The fiber content in carrots can slow down the absorption of sugar in the bloodstream, helping to stabilize blood sugar levels.

Ingredients needed

  • 4 large carrots, peeled and cut into thin, even sticks
  • 2 tablespoons olive oil
  • 2 tsp. agave nectar
  • 1/2 cup grated Parmesan cheese
  • 1 tbsp. fresh parsley
  • 1 clove garlic minced
  • 1 teaspoon paprika
  • 1 tsp. Italian Seasoning
  • Salt and black pepper, to taste

Instructions:

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper or lightly grease it with cooking spray. Sprinkle some of the parmesan cheese over top of the parchment paper to create a thin layer

  2. In a mixing bowl, combine garlic, parsley, paprika, italian seasoning, agave, olive oil, a pinch of salt, and a generous amount of black pepper. Mix everything well to create the crispy coating.

  3. Take the carrot sticks and pat them dry with a paper towel to remove any excess moisture. This will help the coating stick better to the carrots.

  4. Next, take each oiled carrot stick and roll it into the rest of the Parmesan cheese pressing gently to adhere the coating to the carrot. Ensure each carrot stick is evenly coated with the mixture.

  5. Place the coated carrot sticks in a single layer on the prepared baking sheet. Make sure they have some space between them to ensure even crisping.

  6. Bake the carrot sticks in the preheated oven for about 15-20 minutes or until they turn golden brown and crispy. Keep an eye on them to prevent burning.

  7. Once they are done, remove the carrot sticks from the oven and let them cool slightly. Sprinkle some additional salt if desired while they are still warm.

  8. Garnish the crispy Parmesan carrot sticks with chopped fresh parsley for a pop of color and extra flavor.

  9. Serve the carrot sticks immediately as a delightful and nutritious snack, or pair them with your favorite dipping sauce, such as a light aioli, hummus, or ranch dressing.
