Crispy Parmesan Carrot Sticks

These tasty carrots are simple to make using parmesan, carrots, and a simple marinade. Makes a great side dish!

Ingredients
  

  • 4 large carrots peeled and cut into thin, even sticks
  • 2 tablespoons olive oil
  • 2 tsp. agave nectar
  • 1/2 cup grated Parmesan cheese
  • 1 tbsp. fresh parsley
  • 1 clove garlic minced
  • 1 teaspoon paprika
  • 1 tsp. Italian Seasoning
  • Salt and black pepper to taste

Instructions
 

  • Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper or lightly grease it with cooking spray. Sprinkle some of the parmesan cheese over top of the parchment paper to create a thin layer
  • In a mixing bowl, combine garlic, parsley, paprika, Italian seasoning, agave, olive oil, a pinch of salt, and a generous amount of black pepper. Mix everything well to create the crispy coating.
  • Take the carrot sticks and pat them dry with a paper towel to remove any excess moisture. This will help the coating stick better to the carrots.
  • Next, take each oiled carrot stick and roll it into the rest of the Parmesan cheese pressing gently to adhere the coating to the carrot. Ensure each carrot stick is evenly coated with the mixture.
  • Place the coated carrot sticks in a single layer on the prepared baking sheet. Make sure they have some space between them to ensure even crisping.
  • Bake the carrot sticks in the preheated oven for about 15-20 minutes or until they turn golden brown and crispy. Keep an eye on them to prevent burning.
  • Once they are done, remove the carrot sticks from the oven and let them cool slightly. Sprinkle some additional salt if desired while they are still warm.
  • Garnish the crispy Parmesan carrot sticks with chopped fresh parsley for a pop of colour and extra flavour.
  • Serve the carrot sticks immediately as a delightful and nutritious snack, or pair them with your favourite dipping sauce, such as a light aioli, hummus, or ranch dressing.
