I have been asked what makes a Kale Salad better than others? Well, a process of trial and error and reading other sources I have found the best tip for making a kale salad is after you wash and dry your kale you add 1-2 tbsp. of Olive oil and massage the kale leaves. For the Salad:
- 1 bunch of Kale, chopped
- 1/4 head of cabbage shredded and chopped
- 1 red pepper, finely chopped
- 2 green onions, chopped
- 1 carrot shredded
- 1/2 cup chopped nuts: peanuts or cashews
- 1 red serrano (optional)
- 1/4 cup creamy natural peanut butter or cashew butter
- 3 tbsp. rice vinegar
- 2 tbsp. honey
- 1-2 tbsp. tamari
- 1 tsp. garlic powder
- 1/2 tsp. sesame oil
- 1/4 cup canola oil
- salt & pepper
instructions:
To begin, roughly chop the kale and cabbage before placing it the food processor.
Add the Kale and Cabbage to the food processor and chop until very fine consistency.
Add the red pepper, chopped nuts, green onions, shredded carrots and serrano peppers.
For the dressing:
Whisk the peanut butter, rice vinegar, honey, tamari or soy sauce, garlic powder, sesame oil, salt and pepper.
