This Sweet Potato Chickpea Stew is one of my favourite soups of all time. A dish that is packed with healthy ingredients and full of flavour. There is something so satisfying and hearty about this soup and it is so good for the soul. It is like a big hug in a bowl. Using simple ingredients such as chickpeas, sweet potatoes, ginger, garlic spinach, red lentils, tomatoes and spices. A delicious stew that is light enough to be served in the spring or hearty enough to serve in the winter.

Ingredients:
For the ingredients you will need:
- 2 tbsp. olive oil
- 1 large onion, chopped
- 4 garlic cloves, minced or 2 tbsp. garlic puree
- 1 inch fresh ginger grated, or 1 tbsp. ginger puree
- 2 large sweet potatoes, peeled and cut into small cubes
- 1/2 cup water
- 1 small can (250 ml) chickpeas
- 1/2 cup red lentils
- 8 cups vegetable stock
- 1 cup chopped grape tomatoes
- handful of spinach
- 1 tbsp. curry powder
- 1/2 tsp. all spice
- 1/2 tsp. cinnamon
- 1/2 tsp. coriander
- Salt & pepper to taste
- squeeze of fresh lemon
- 1/2 cup coconut milk (optional)
Instructions:
Heat olive oil over medium heat.
Add onions and cook for 3-5 minutes or once it starts turning a little golden.
Stir the sweet potatoes into the onions. Add 1/2 cup water and place a lid on the pot. Let everything sweat for 5 minutes.
Remove the lid and add in the spices, garlic and ginger, salt and pepper. Toast the spices for 1 minute.
Now add in the chickpeas, red lentils, tomatoes, and vegetable stock. Slightly cover the lid and simmer for at least 20 minutes.
Remove the lid, add in spinach, coconut milk, and a squeeze of lemon juice.
Serve with a toasted baguette.
