what makes a good mediterranean salad?
What makes a good mediterranean salad you might ask? The more fresh veggies the better! I will also have to include a good hummus, fancy olives and some Lebanese Garlic Spread.
I found the most amazing olives at my local mediterranean market. The name of the brand is called Judi brand Grilled Olives. The olives are kind of smoky and salty. They are certainly delicious!

So you are having a busy day and still want to eat healthy right!
Well no sweat here, whip up this salad in a breeze.
Here are some quick tips for making this dinner quick!
- Buy some frozen ready-made falafel to just throw into the air fryer or oven while you are making the salad
- Buy store-bought hummus! It’s just that easy
- Buy a good jar of olives to add more items to the salad
- Get some of that Lebanese Garlic spread. It is delicious for dipping your falafel into it. Mmmm.
- Buy some store bought fresh pita bread to serve with the salad!
Salad Ingredients:
The salad can be made with your choice of vegetables but here is the list of veggies that I used for this recipe:
- 1 head Romaine chopped
- 1 cup Cucumber diced
- 1 cup Tomatoes, diced
- 1/2 cup sliced red cabbage
- 1 red pepper, diced
- 2 radishes sliced thin
- 1/4 cup red onion
- 1/4 cup fresh parsley chopped
- 1/2 cup feta cheese crumbled
- Store bought hummus
- Store Bought Falafel, cooked according to the package
- Lebanese Garlic Spread
- Pita Bread for the side (optional)
Salad dressing Ingredients
For this salad dressing we will be using few ingredients but you will need the ingredient Sumac. It has a zippy tangy flavour that adds an interesting flare to the salad dressing.
For the dressing you will need:
- 1 tsp. salt
- 1 tsp. sugar
- 1 tsp. red wine vinegar
- 1 tsp. fresh lemon juice
- 1 garlic clove minced
- 1 tsp. dried mint
- 1 tsp. dried oregano
- 1 tsp. sumac
- 1/4 cup olive oil
- pepper
Directions:
Start by dissolving the salt and sugar into the vinegar. Add all of the other ingredients and whisk in the olive oil. Add Pepper and adjust if necessary.

For the Salad Dressing

- 1 tsp. sumac
- 1/4 cup olive oil

Instructions
- Start by dissolving the salt and sugar into the vinegar. Add all of the other ingredients and whisk in the olive oil. Add Pepper and adjust if necessary.
- Add all of the salad ingredients to a bowl and toss with the salad dressing.
- To plate: spread some hummus along one portion of the bowl. Add the salad, and the falafel. Add a spoonful of the garlic spread on the side and serve with a wedge of a pita.
