get yourself a crepe pan!
If you don’t already have a crepe pan you might want to get yourself one! They are fairly reasonable in price. I picked up a Eslite Life Nonstick Crepe Pan on Amazon and it is very pretty, durable and has a beautiful soft wooden handle. You can also use the crepe pan for other things such as making tortillas!

So having a beautiful silky and smooth batter is important for making a good crepe.
A great little hack that I use for making a crepe silky smooth is by pouring all of the ingredients minus the butter into a Vitamix Blender.
I like to pour the melted butter into the crepe batter while the blender is running. You will hear the crepe batter change sound. That is when I like to stop and pour it into a large measuring cup and then let it rest for a few minutes.
Here are some good reasons to use a blender to mix up your crepe batter:
Smooth Texture: Blending helps break down any lumps or clumps in the batter, resulting in a smoother consistency. This is crucial for achieving the thin and even texture characteristic of well-made crepes.
Homogeneous Mixture: Blending ensures thorough mixing of all ingredients, creating a homogeneous batter. This is important for even distribution of flour, eggs, milk, and other components, contributing to the uniformity of the crepes.
Aeration: Blending introduces air into the batter, leading to aeration. This can contribute to the light and delicate texture of the crepes, making them tender and easier to cook evenly.
Efficiency: Using a blender is a quick and efficient way to combine ingredients, saving time and effort compared to manual mixing. It simplifies the process, making it more accessible for home cooks.
Consistency: Blending ensures that the batter has a consistent thickness and texture throughout. This consistency is essential for achieving uniform cooking results, preventing some crepes from being thicker or thinner than others.

Ingredients:
For the crepes you will need:
- 1 cup flour
- 2 tbsp. sugar
- 1/4 tsp. salt
- 1/4 tsp. cinnamon
- 1 1/2 cups milk
- 2 eggs
- 1 tsp. vanilla extract
- 2 tbsp. melted butter
- butter for greasing the pan
instructions:
To make the crepes:
Combine Dry Ingredients:
- In a mixing bowl, whisk together the flour, sugar, cinnamon and salt.
Add Wet Ingredients:
- In a blender, add the milk, eggs and vanilla extract and blend until fully incorporated
- Melt the butter in the microwave
Combine Wet and Dry Mixtures:
- Add the milk and egg mix to the dry flour mix and stir slightly.
- Pour the batter into the blender and blend on medium.
- Gradually add the melted butter while the blender is running.
Rest the Batter:
- Allow the batter to rest for at least 10 minutes at room temperature. This helps the flour absorb the liquids and results in a smoother batter.
Heat the Pan:
- Heat a non-stick crepe pan or skillet over medium heat. Lightly grease it with butter or cooking spray
Pour and Swirl:
- Pour a small amount of batter (about 1/4 cup for an 8-inch pan) onto the center of the hot pan. Quickly lift the pan and swirl it, spreading the batter thinly across the surface.
Cook the Crepe:
- Cook for about 1-2 minutes or until the edges start to lift and the bottom is golden brown. Flip the crepe and cook the other side for an additional 30 seconds to 1 minute.
- I like to add Nutella at this point while the other side cooks. It melts and spreads nicely.
- Fold each edge inwards towards the center. Transfer to a plate.
- Sprinkle with powdered sugar and cinnamon. Enjoy!
