Here’s a recipe for Honey Butter Roasted and Caramelized Sweet Potatoes with Fresh Thyme:
- 4 medium sweet potatoes, peeled and cut into 1-inch cubes
- 2 tablespoons unsalted butter, melted
- 2 tablespoons honey
- 2 tablespoons fresh thyme leaves
- Salt and pepper to taste

Preheat the Oven:
- Preheat your oven to 375°F and line a baking sheet with parchment paper.
Sweet Potatoes:
- Slice the sweet potatoes in half. Drizzle each sweet potato with olive oil. Season with salt & pepper. Rub the olive oil, salt and pepper all around the surface of the halved sweet potato. Place the sweet potato flesh side down and skin side up on the parchment lined baking sheet.
Roast:
- Place the baking sheet in the preheated oven and roast for about 40-45 minutes, or until the sweet potatoes are tender and caramelized around the edges.
Caramelize:
- Remove the roasted sweet potatoes from the oven and set aside.
- To a large skillet, add the butter and honey. Melt everything together over medium heat.
- Place the sweet potatoes flesh side down in the skillet and caramelize for approximately 3 minutes. You just want to get that sweet honey butter infused into the sweet potato and not burn it. Flip the sweet potato over momentarily and then place on a serving tray.
Serve:
