Make Them Your Own

One of my favourite things about this recipe is how versatile it is. Feel free to swap ingredients based on what you have on hand.

Try adding:

  • Dried cranberries or raisins instead of chocolate chips
  • Chopped pecans, walnuts, or almonds
  • Sunflower seeds instead of pumpkin seeds
  • Ground flaxseed in place of chia seeds
  • Almond butter instead of peanut butter for a different flavor

You can even sprinkle in a little unsweetened coconut or a pinch of nutmeg for extra warmth.

Healthy Oatmeal Breakfast Cookies (Easy Make-Ahead Recipe)

These Healthy Oatmeal Breakfast Cookies are naturally sweetened with honey, packed with oats, peanut butter, chia seeds, and chocolate chips. Perfect for meal prep, busy mornings, and healthy snacks.

Ingredients

  • 2 cups old fashioned rolled oats
  • 3/4 cup peanut butter or almond butter
  • 1/3 cup honey
  • 1 large egg
  • 2 tbsp. Chia seeds or ground flax seed
  • 1/2 cup pumpkin seeds or chopped nuts
  • 1/3 cup mini chocolate chips or cranberries or raisins
  • 2 tsp. Vanilla extract
  • 1-1/2 tsp. Cinnamon
  • 1/2 tsp. Sea salt
  • 1/2 tsp. Baking soda
  • 1/2 tsp. Baking powder

Method

  1. Preheat the oven to 350 degrees.
  2. Line a baking sheet with parchment paper.
  3. In a large bowl, add the egg, honey, peanut butter, and vanilla extract. Mix until smooth.
  4. Now add the dry ingredients, cinnamon, salt, baking soda, baking powder. Stir to combine.
  5. Add in the old fashioned rolled oats, chia seeds, pumpkin seeds and mini chocolate chips.
  6. Mix well, the dough should be thick and sticky.
  7. Lightly wet your hands so the dough doesn’t stick. Scoop out some dough, roll into a ball and then press into a thick cookie. Place on the baking sheet. Bake at 350 degrees for about 14-16 minutes.
  8. The cookies will crack slightly on top. Let them cool on the tray for at least 10 minutes before eating. They will firm up as they cool. Enjoy!

Tips for the Best Breakfast Cookies

  • Wet your hands before shaping the dough. Since there’s no traditional flour, the dough is naturally sticky.
  • Don’t overbake. The cookies should just begin to crack on top and remain soft in the center.
  • Let them cool completely on the baking sheet. They’ll continue to firm up as they cool.

Storage

Store the cookies in an airtight container at room temperature for up to 4 days or refrigerate for up to one week.

These cookies also freeze incredibly well. Place cooled cookies in a freezer-safe bag or container for up to 3 months. I like to eat these cookies right from frozen!
