Healthy Oatmeal Breakfast Cookies (Easy Make-Ahead Recipe)

These Healthy Oatmeal Breakfast Cookies are naturally sweetened with honey, packed with oats, peanut butter, chia seeds, and chocolate chips. Perfect for meal prep, busy mornings, and healthy snacks.

Ingredients
  

  • 2 cups old fashioned rolled oats
  • 3/4 cup peanut butter or almond butter
  • 1/3 cup honey
  • 1 large egg
  • 2 tbsp. Chia seeds or ground flax seed
  • 1/2 cup pumpkin seeds or chopped nuts
  • 1/3 cup mini chocolate chips or cranberries or raisins
  • 2 tsp. Vanilla extract
  • 1-1/2 tsp. Cinnamon
  • 1/2 tsp. Sea salt
  • 1/2 tsp. Baking soda
  • 1/2 tsp. Baking powder

Method
 

  1. Preheat the oven to 350 degrees.
  2. Line a baking sheet with parchment paper.
  3. In a large bowl, add the egg, honey, peanut butter, and vanilla extract. Mix until smooth.
  4. Now add the dry ingredients, cinnamon, salt, baking soda, baking powder. Stir to combine.
  5. Add in the old fashioned rolled oats, chia seeds, pumpkin seeds and mini chocolate chips.
  6. Mix well, the dough should be thick and sticky.
  7. Lightly wet your hands so the dough doesn’t stick. Scoop out some dough, roll into a ball and then press into a thick cookie. Place on the baking sheet. Bake at 350 degrees for about 14-16 minutes.
  8. The cookies will crack slightly on top. Let them cool on the tray for at least 10 minutes before eating. They will firm up as they cool. Enjoy!
