Ingredients:

    • 1 lb Brussels sprouts, trimmed and halved
    • 1 head roasted garlic, see below
    • 2 tablespoons olive oil
    • 1/4 cup grated Parmesan cheese
    • 1/4 cup breadcrumbs
    • Zest of 1 lemon
    • Salt and pepper to taste

Instructions:

  1. Preheat your oven to 375°F. Line a baking sheet with parchment paper or lightly grease it with olive oil.

  2. In a large bowl, toss the halved Brussels sprouts with roasted garlic, lemon zest, parmesan cheese, breadcrumbs, olive oil, salt, and pepper until evenly coated.

  3. Spread the Brussels sprouts in a single layer on the prepared baking sheet, cut side down. Roast in the preheated oven for 20-25 minutes or until the sprouts are tender and caramelized, stirring halfway through cooking

  4. Once the Brussels sprouts are done roasting, remove them from the oven.

  1. Take 1 head of garlic and slice the top off.
  2. Place the head of garlic on a piece of tin foil.
  3. Add olive oil, salt and pepper.
  4. Wrap the garlic and then roast in the oven for 25-30 minutes or until the garlic is softened.
