  • 2 green onions, thinly sliced
  • 1 small shallot
  • 1-2 tsp. puree garlic
  • 1/4 cup chopped fresh basil
  • 2 tsp. sugar
  • 3 tbsp olive oil
  • Salt and pepper to taste
  • Balsamic Glaze (optional)

  1. Preheat the oven to 400°F.
  2. Cut the spaghetti squash in half lengthwise and scoop out the seeds.
  3. Brush the flesh side of the squash with olive oil and season with salt and pepper.
  4. In a small bowl, mix the diced tomatoes, green onions, garlic, shallot, fresh basil, and a tiny bit of sugar. 
  5. To Assemble: Place a wedge of feta in each of the hollowed out squash pieces. Pour the tomato mix over the feta cheese on both halves of the squash. drizzle with oil and sprinkle a bit more salt and pepper. 
  6. Bake in the oven for a 1 hour to 1 hour and fifteen minutes.
  7. Using a fork, scrape the flesh of the squash into spaghetti-like strands while mixing the tomatoes and flavourings all together within the squash.
