a trick to keeping the stir-fry low fat

There is a little trick that I use all of the time when I am cooking ground pork, beef or chicken. I always brown the meat in olive oil and then DRAIN the meat into a colander once it has browned. This will likely 5-7 minutes. I wipe clean the frying pan before placing the meat back into the frying pan. This will eliminate the grease making it a cleaner taste in the end. Secondly, I will usually add onion at this point and the REAL SECRET here is adding a cup of water to the frying pan to continue cooking your onion and or other ingredients. This is a fantastic way to continue cooking with less fat! Once your onions taste SWEET it will be time to add your sauce at the end. The water will evaporate just in time for the onions and other ingredients to soften. It really works out great!
