If you’re a fan of bruschetta, then you’ll absolutely love this elevated version of the classic Italian appetizer.
This recipe takes things up a notch by adding creamy burrata cheese to the mix.

This dish is the perfect combination of textures and flavours and is sure to impress your guests at your next dinner party.

The great thing about this recipe is that it takes very little time to make and it is so fresh and delicious!
The way that I like to prepare this dish is placing a fine mesh colander over top of a bowl. I slice, seed and then dice the tomatoes and pop them into the colander. Why are we putting the tomatoes in a colander you might ask? Placing diced fresh tomatoes in a colander and salting them is a common technique used to remove excess moisture from the tomatoes.
The salt helps to draw out the excess moisture from the tomatoes, which are collected in the colander. This can also help to intensify the flavour of the tomatoes, as the salt can enhance the natural sweetness of the fruit.
I also like to sprinkle a tiny bit of sugar on the tomatoes at this time to balance out the taste of the tomato.
While the tomatoes are hanging out in the colander I also like to season them up with chopped green onions, 1 tbsp. chopped fresh basil, 1 clove of garlic, 1 tsp. oregano, and pepper.
I leave it all to blend together for about 10 minutes.
After 10 minutes, I drain the liquid from the bowl and add in the chopped seasoned tomatoes. Drizzle with Olive oil and balsamic and you are done! Fresh & delicious!

- For the Bruschetta:
- 1 large baguette, sliced into 1/2-inch thick pieces
- 5-7 medium tomatoes, diced
- 2 green onions, chopped
- 1 tsp. oregano
- 2-3 cloves garlic, minced
- 1/4 cup fresh basil leaves, chopped
- 2 tablespoons balsamic vinegar
- 2 tablespoons extra-virgin olive oil
- Salt and freshly ground black pepper, to taste
For the Burrata:
- 1 large Fresh Burrata Ball
There is nothing better than fresh burrata in my opinion and pairs perfectly with bruschetta. For this recipe, I mashed the burrata down so that it became easier to spoon that cheesy goodness over the toasted baguette and then top it with the bruschetta!
Instructions:
- Preheat the oven to 400°F (200°C).
- Arrange the baguette slices in a single layer on a baking sheet and brush each slice with olive oil.
- Toast the bread in the oven for 5-7 minutes or until they are lightly golden brown.
- In a fine mesh colander, combine the diced tomatoes, green onion, oregano, garlic, basil and pepper.
- Let everything hang out for approximately 10 minutes stirring once or twice in between.
- Drain the liquid from the bowl and then add the seasoned tomatoes
- Add balsamic vinegar and olive oil to the tomato mixture
- Mix all ingredients well until everything is evenly coated.
- Spoon the tomato mixture over the toasted baguette slices, dividing it evenly among the slices.
- Serve immediately while still warm or at room temperature.
