You can make this salsa ahead of time and keep it refrigerated until you serve your dish! I made a Cedar Plank Salmon with an herbed basmati rice and topped the salmon with the Avocado Mango Salsa.
I found that simply adding a squeeze of lime and some salt & pepper was about right. It didn’t take away from the seasonings on the salmon. So Fresh and Fancy! I hope you enjoy this recipe!

- 1 Avocado, diced
- 1 Ataulfo mango, diced
- 1 Red Pepper, diced
- 1 tbsp. Cilantro, chopped
- 1 tbsp. Red Onion
- 1/2 Fresh Lime
- 1 tsp. Salt & Pepper
