I just loved the colours in this salad and had to re-create it at home! It is so good!

- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon garlic powder
- 1/4 teaspoon paprika
- 1/4 teaspoon cinnamon
- 1/2 cup chopped red onion
- 1/2 cup chopped roasted red peppers
- 1 cup sundried tomatoes, sliced
- 1/4 cup chopped fresh parsley
- 1/4 cup crumbled feta cheese
- 2 tablespoons lemon juice
- 1 tablespoon honey
- 2 tablespoons Dijon mustard
Instructions:
Preheat your oven to 400°F.
Peel and dice the sweet potatoes into small bite-sized pieces.
In a mixing bowl, combine the sweet potatoes, olive oil, salt, black pepper, garlic powder, cinnamon and paprika. Mix until the sweet potatoes are coated in the spices.
Spread the sweet potatoes in a single layer on a baking sheet and roast for 20-25 minutes or until they are golden brown and tender.
- Dice a red onion and saute the onion until translucent and sweet to taste.
While the sweet potatoes are roasting, prepare the dressing by whisking together the lemon juice, honey, and Dijon mustard in a small bowl.
Once the sweet potatoes are done, remove them from the oven and let them cool for a few minutes.
