Keep the oven heated to 350 degrees.
Grease 2 small tin loaf pans with butter or baking spray.
Sift flour, cinnamon, baking soda and salt into a bowl. Set aside.
In a separate large bowl, use a hand mixer to soften the butter quickly. Add in the sugar(s) and blend until the butter and sugar are incorporated. Add the smashed bananas, eggs, and vanilla. Blend until well combined.
Pour the flour mixture into the the sugar/banana mix all at once. Using a spatula mix the batter into just combined. Do not overmix.
Pour the batter between the two tin loaf pans.
Bake at 350 degrees for approximately 25-30 minutes. Stick a toothpick in the middle and if it removes clean the banana bread is ready.
Cool on a rack. remove the banana breads from the tin loaf pans and cool on a wire rack and on their side. This will prevent the bread from going mushy.
Spread butter on a slice while its warm for maximum goodness!
