Asian Cabbage Slaw Recipe

This Asian Cabbage Slaw is made with crunchy savoy cabbage, toasty ramen noodles, sweet cranberries, chopped green onions, edamame beans, red cabbage, julienned carrots, all dressed in a mouthwatering Asian-inspired vinaigrette.

Ingredients
  

  • 1 cup Mayonnaise
  • 2 tbsp. Honey
  • 3 tbsp. Apple Cider Vinegar
  • 2-3 tsp. Tamari or Soy Sauce
  • 2 tsp. peanut butter
  • 2 tsp. ground ginger or minced fresh ginger
  • 2 tsp. garlic powder
  • Salt &. Pepper
  • 1 small head Savoy Cabbage shredded
  • 1 cup purple cabbage shredded
  • 1 cup julienned carrots
  • 1 cup edamame beans I use frozen shelled edamame cooked according to the package directions
  • 1 pkg. Ramen noodles -Chicken or Vegetable and seasoning
  • 1/2 cup cranberries
  • 1/3 cup green onions diced
  • 1/2 cup cashews or peanuts

Instructions
 

  • For The Dressing:
  • In a small bowl, mix the mayonnaise, honey, apple cider vinegar, tamari, peanut butter, ginger, garlic powder, salt and pepper.
  • For the Asian Cabbage Slaw:
  • In a small skillet warm 2 tsp. olive oil. Add 1 packet of ramen noodles and the seasoning packet. Brown the Ramen noodles for approximately 3-5 minutes until nicely toasted and not burnt! Burning it can happen quick so watch it closely.
  • To a large bowl, add each of the following ingredients: savoy cabbage, purple cabbage, carrots, edamame beans, ramen, cranberries, green onions, cashews, salt and pepper.
  • Add the dressing and toss it all together until it is blended nicely. Chill until ready to serve.
