Sweet Potato-Chicken Burger Recipe

These healthy and lean chicken burgers with shredded sweet potatoes are delicious and easy to make! Top with creamy feta sauce, grilled pineapple, bacon, red onion, avocado and honey goat cheese. They are next level good!

Ingredients
  

  • 1 pkg. Ground Chicken
  • 2 cups Sweet Potatoes, peeled and finely grated
  • 1/2 cup diced red onions
  • 2 tsp. parsley
  • 1 large egg
  • 1/2 tsp. cumin
  • 1/2 tsp. coriander
  • 2 tsp. garlic
  • 1 tsp. paprika
  • 1 tsp. lemon zest
  • 1/2 lemon squeezed

Instructions
 

  • To make the burgers, mix all ingredients together in a large bowl and shape into patties. For this recipe I made slider sized burgers and made 6 burgers with 1 lb. of ground chicken.
  • Cooking Instructions:
  • Grilling: I like to grill my burgers. I start out using a perforated grilling tray on a medium-high grill. Cook for 7 minutes. Flip them over and continue to cook for another 5 minutes. Place the burger patties directly on the grill and continue to cook for 3 more minutes on each side.
  • Frying pan/Oven Method:
  • Preheat oven to 400 degrees.
  • Add olive oil to a pan and add the burger patties once pan is hot. Cook for a couple of minutes on each side. Place the burgers on a baking sheet lined with parchment paper and bake for 15 minutes or until the burgers reach an internal  temperature of 165 degrees.
