I love goat cheese and use it mostly on salads. I especially love Honey Goat Cheese which may be a little more challenging to find. If you are in Canada, you can find the honey goat cheese at Metro Grocery Stores.

Whipped Goat Cheese REcipe:

Here are the ingredeints that you will need to make this appetizer:

Ingredients:

For the Whipped Goat Cheese Dip:

  • 8 oz goat cheese
  • 4 oz cream cheese, softened
  • 2 tablespoons heavy cream
  • 1 tablespoon olive oil
  • Salt and freshly ground black pepper, to taste

For the Pesto:

  • 1 cup fresh basil leaves
  • 1/4 cup pine nuts (or walnuts)
  • 1/4 cup grated Parmesan cheese
  • 1-2 garlic cloves
  • 1/4 cup extra virgin olive oil
  • Salt and freshly ground black pepper, to taste

For the Stewed Strawberry Topper:

  • 1 cup fresh strawberries, hulled and quartered
  • 1 tablespoon honey
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon lemon juice
  • Pinch of salt

 

Instructions:

1. Make the Whipped Goat Cheese Dip:

  • In a food processor, combine the goat cheese, cream cheese, heavy cream, and olive oil.
  • Blend until smooth and creamy.
  • Season with salt and pepper to taste.
  • Transfer to a serving bowl and set aside.

2. Prepare the Pesto:

  • In a food processor, combine the basil leaves, pine nuts, Parmesan cheese, and garlic cloves.
  • Pulse until the mixture is finely chopped.
  • With the processor running, slowly drizzle in the olive oil until the pesto is smooth and well combined.
  • Season with salt and pepper to taste.
  • Set aside.

3. Prepare the Stewed Strawberry Topper:

  • In a small saucepan, combine the strawberries, honey, balsamic vinegar, lemon juice, and a pinch of salt.
  • Cook over medium heat, stirring occasionally, until the strawberries are softened and the mixture is slightly thickened, about 10-15 minutes.
  • Remove from heat and let cool to room temperature.

4. Assemble the Dip:

  • Spread the whipped goat cheese dip evenly in the serving bowl.
  • Spoon the pesto over the center of the goat cheese dip.
  • Add the stewed strawberries on top of the pesto.

5. Serve:

  • Serve the dip with crackers, sliced baguette, or fresh vegetables.
