This most delicious Summer Mediterranean Salad is full of healthy goodness! It is also a great way to use summer vegetables! I just love eating light in the summer. This salad has roasted vegetables, fresh greens, beans, goat cheese! A really nice twist on a traditional green salad.
I also find that roasting vegetables makes them taste more subtle and easy to eat!
Packed with nutrition this is a great option if you are watching what you eat! Serve on a large plate it will look so fancy and pretty with all the different colours! Healthy & Delicous!
Summer Mediterranean Salad
A mix of Roasted Vegetables and Fresh Greens makes this salad packed with nutrition and so delicious!
Ingredients
- 1 pkg. Cherry Tomatoes
- 2 Green Zucchini
- 2 Yellow Zucchini
- 1/2 Red Onion
- 2 Garlic, peeled
- 1 Broccoli, (optional)
- 1/2 Lemon, cut into wedges
- 1 can Chickpeas, drained and washed
- 1 pkg. Spring Mix
- 1 tbsp. Honey
- 1 tbsp. Balsamic Vinegar
- 1/4 cup Crumbled Honey Goat Cheese
- Olive Oil
- Salt & Pepper
- 1 tbsp. Fresh Basil & Mint
Instructions
- Preheat the oven to 420 degrees. Line a baking sheet with Parchment paper.Place the Tomatoes, Green and Yellow Zucchini, Red Onion, Garlic, and Lemon Wedges on the tray. Drizzle with Olive Oil and season with salt and pepper. Blend together. Bake for 20 minutes or until roasted nicely. Allow time to cool.To Assemble:Add the roasted vegetables to a large bowl. Take the roasted lemon wedges and squeeze out the lemon juice over the roasted vegetables and toss out. Add the chickpeas, and spring mix to the roasted vegetables. Drizzle the salad with honey, balsamic and another drizzle of olive oil and toss. Taste and season with salt and pepper if desired. Place the Salad on a large plate. Top with Goat Cheese, and fresh basil and mint. Serve chilled.
