Easy Mexican Lasagne With Tortillas

If you’re looking to spice up your dinner routine, Mexican lasagna is a delicious and flavourful twist on a classic Italian dish. This dish combines the best of both worlds by layering tortillas with a savoury filling of ground chicken, peppers,  black beans, salsa and spices. With a generous amount of melted cheese, this casserole-style meal is perfect for feeding a crowd or meal prepping for the week ahead. In this recipe, I’ll show you how to make a mouth-watering super-easy Mexican lasagna that’s sure to become a new family favourite.

Ingredients:

For a healthy option I like to use ground chicken or turkey for the meat Here is a list of the ingredients that I used for making this Mexican lasagne:

  • Tortillas – They make perfect layers when you lay them down in the baking dish
  • Ground Chicken – I love using ground chicken, it’s healthy and clean tasting!
  • Salsa – Any salsa will work. I used a medium salsa in this recipe 
  • Black Beans – Rich in iron and gives the authentic Mexican taste
  • Peppers – I like to use red pepper and pickled jalapeños for a nice little kick!
  • Spices – granulated garlic, chili powder, smoked paprika and granulated onion
  • Shredded Cheese – I like to buy the Mexican Shredded Cheese

The Secret Fresh Herb Mix

A fresh herb mixture can add a burst of flavour and elevate any dish to new heights. For this recipe I like to use a combination of fragrant herbs such as cilantro, parsley, green onion, and dried oregano to add a depth of flavour that really lifts the dish and gives a nice colour. I like to mix the herbs with agave nectar, olive oil, salt and pepper. 

Instructions

  1. Preheat the oven to 425 degrees.
  2. Spray an 8×8 baking dish with cooking spray. 
  3. Over Medium heat, warm the olive oil. Add in the ground Chicken and cook the meat until it is no longer pink using a potato masher utensil to break up the meat into small pieces.
  4. Add in the onions, red peppers, garlic powder, onion salt, and chilli powder. Continue to cook for another 3 minutes.
  5. Add the herb mixture to the meat, and a squeeze of lime; stir it all together and remove it from the heat.
  6. Assembly: Spray the tortilla and place it into the bottom of the baking dish. Add 1/3 of the meat mixture to cover the bottom. Keep in mind that you will be making 3 layers and need enough meat to cover each layer.  Add a handful of the black beans, 1/3 of a jar of salsa, and a layer of shredded cheese. Complete this exact process 2 more times.  Bake at 425 degrees for 25-30 minutes.
  7. Let cool slightly before serving.

Ingredients
  

For the Lasagne Filling

  • 3 Large Tortillas
  • 1 tbsp. 1 tbsp. Olive Oil
  • 1 pkg. 1 pkg. Ground Chicken
  • 1 1 red pepper, diced
  • 2 tsp. Granulated Garlic
  • 2 tsp. Onion salt
  • 2 tsp. Chilli powder
  • 1 can Black beans, drained and rinsed
  • 1 jar Salsa, use your favourite
  • 1 bag Shredded Mexican cheese Blend and if you can find Cotija cheese (Mexican cheese that is delicious!) 

Fresh Herb Mixture

  • 1 cup Fresh parsley, chopped
  • 1/4 cup Fresh Cilantro
  • 3 Green onion, chopped
  • 1 tbsp. Pickled Jalapeno, chopped (or fresh)
  • 1 tbsp. Agave Nectar
  • 1 tbsp. 1 tbsp. Olive Oil
  • Salt and Pepper

Complete this exact process 2 more times. Remember to spray each tortilla before adding it to the lasagne. Bake at 425 degrees for 25-30 minutes.Let cool slightly before serving.

Herb Mixture

  • Add all of the ingredients to a food processor and pulse until nice and smooth.
