These coca cola ribs are so easy to make and taste incredible! The secret to these fall-off-the-bone tender ribs is marinating the ribs in coca cola overnight. After the marinade, we season the ribs up and bake them low and slow! This recipe is a cinch and tastes incredible!Â
Another secret to making these ribs so flavourful is spreading Gram’s Ultimate BBQ sauce on them before adding the seasoning.Â
A couple tips for easy clean up! I love easy in the kitchen and so I absolutely love using parchment paper to line my baking sheets. I just love using pre-cut 9×13 parchment paper sheets. They line the baking sheet just perfectly and its a easy clean up!
Tenderizing the MEat with cola?
Coca-Cola works as a remarkable meat tenderizer due to its unique chemical composition. The soda contains phosphoric acid, which breaks down protein structures in meat, effectively softening muscle fibers and creating a more tender texture.
The carbonation also plays a crucial role, with the bubbles helping to penetrate the meat and create microscopic pathways for the marinade. Additionally, the natural sugars in Coca-Cola caramelize during cooking, adding a subtle sweetness while further breaking down tough meat protein.Â
Marinating for 8-24 hours allows the acid and carbonation to work their magic, transforming even potentially tough cuts of meat into incredibly tender, flavourful dishes that practically melt in your mouth.
Rib Rub Recipe: Essential to good tasting ribs
A good spice rub recipe is always great to have on hand! By mixing a few pantry staple spices you can create the ultimate flavour bomb for your ribs! Here is a recipe for my Rib Rub.
Rib Rub Recipe:
- 1/4 cup brown sugar
- 1 tbsp. garlic powder
- 1 tbsp. onion powder
- 1 tbsp. smoked paprika
- 1 tsp. ground fennel
- 1 tsp. celery seed
- 1 tbsp chili powder
- 2 tsp salt
- 1 tsp black pepper

- 1 rack of pork ribs (3-4 lbs)
- 2-3 cans Coca-Cola
Dry Rub:
- 1 cup Gramâs BBQ Sauce (see below)
- 1/4 cup brown sugar
- 1 tbsp. garlic powder
- 1 tbsp. onion powder
- 1 tbsp. smoked paprika
- 1 tsp. ground fennel
- 1 tsp. celery seed
- 1 tbsp chili powder
- 2 tsp salt
- 1 tsp black pepper
- 1 cup ketchup
- 1 cup mustard
- 3/4 cup White Vinegar
- 1/2 cup Sugar
- 2 tsp. Cayenne
- 1 tsp. Garlic
- 1 tsp. Chili Powder
- 1/2 tsp. Salt
Instructions:
- Prepare the Ribs: Remove membrane from back of ribs
- Place the ribs in a ZipLoc Bag. Pour 2-3 cans of coca cola. Add enough to cover the ribs.
- Refrigerate and Marinate ribs for 24 hours.
- Drain the marinade and place the ribs on a baking sheet. Dry the ribs with paper towels really good.
- Preheat oven to 300°F
- Spread Gramâs BBQ Sauce over the ribs.
- Add the following: brown sugar, garlic powder, onion powder, smoked paprika, chili powder, fennel, celery seed, salt & pepper. Rub the spices and sauce into the ribs.
- Cover the ribs in tin foil. Place the ribs onto a parchment lined baking sheet (for easy cleaning)
- Bake for 2.5-3 hours until tender
- Open the tin foil up and brush the ribs with your favourite bbq sauce. Place the ribs back into the oven and broil for 3-5 minutes until sauce caramelizes
- Let rest 10 minutes before serving

Ingredients
- 1 cup Mustard
- 1 cup Ketchup
- 3/4 cup Vinegar
- 1/2 cup Sugar
- 2 tsp. Cayenne
- 1 tsp. Black Pepper
- 1 tsp. Garlic Salt
- 1 tsp. Chilli Powder
- 1/2 tsp. Salt
Instructions
- Whisk Everything Together and keep it in an airtight container or you can purchase a squeeze bottle with a lid and keep it refrigerated! This sauce is amazing on most anything! Great on Steaks, Chicken, Omelettes, and French Fries! I have even used it as a marinade for meat!
