Would you agree that there is nothing better than a fresh egg salad sandwich on butter bread, a slice of lettuce and possibly a slice of swiss cheese? That sounds so good!

A classic recipe with a few tricks up my sleeve for this recipe for homemade egg salad sandwich.

This is my son’s most favourite sandwich and I am glad to share it with him and all of you.

How to hard boil eggs

To hard boil eggs it is a straight-forward process. I like to use 4 eggs to make two large sandwiches. Here is the process for hard boiling eggs:

  1. Prepare the Eggs:

    • Place the desired number of eggs in a single layer at the bottom of the saucepan. Use fresh eggs for best results.
  2. Add Water:

    • Add enough water to the saucepan to cover the eggs by about an inch.
  3. Heat the Water:

    • Place the saucepan on the stove over medium-high heat and bring the water to a gentle boil.
  4. Boil the Eggs:

    • Once the water reaches a rolling boil, turn off the heat and cover the saucepan with a lid. Let the eggs sit in the hot water for the desired amount of time:
      • 9-12 minutes for large eggs (adjust for smaller or larger eggs).
  5. Prepare an Ice Bath:

    • While the eggs are sitting, fill a large bowl with ice water.
  6. Cool the Eggs:

    • Using a slotted spoon or tongs, carefully transfer the eggs from the saucepan to the ice water bath.
  7. Let Them Cool:

    • Allow the eggs to sit in the ice water for at least 5-10 minutes. This helps stop the cooking process.
  8. Peel the Eggs:

    • Gently tap the eggs on a hard surface to crack the shell, then roll them between your hands to loosen the shell. Peel the shell starting from the wide end.
  9. Rinse (Optional):

    • Rinse the peeled eggs under cool running water to remove any small shell fragments.

Your hard-boiled eggs are now ready to eat or use in your favourite recipes! They can be stored in the refrigerator for up to one week.

Tips & Tricks for Peeling Hard boiled eggs

There are several techniques that can help make it easier to peel hard-boiled eggs:

  1. Add Vinegar or Baking Soda: Adding a small amount of vinegar or baking soda to the boiling water can help to weaken the bond between the egg whites and the shell, making it easier to peel.

  2. Shock in Ice Water: After boiling, transfer the eggs to a bowl of ice water and let them sit for at least 5-10 minutes. The rapid cooling helps to contract the egg inside the shell, making it easier to peel.

  3. Roll and Crack the Shell: Gently tap the boiled egg on a hard surface to crack the shell, then roll it between your hands to loosen the shell. This creates small cracks that can help with peeling.

  4. Peel Under Running Water: Peeling under a stream of running water can help remove any stubborn shell fragments and make the process smoother.

  5. Start Peeling from the Wide End: Begin peeling from the wider end of the egg where the air pocket is located. This is usually the easiest place to start.

  6. Use a Spoon: If you’re having trouble getting the shell to start, you can try using a spoon to gently lift a section of the shell.

  7. Be Patient and Gentle: Take your time when peeling to avoid tearing the egg white. Gently work your way around the egg.

So What's the twist?

The secret to making this egg salad next level good, is to use both Miracle Whip and Hellman’s mayonnaise. 

The second little tip is that I like to add a small amount of sweet bread & butter pickle juice. It adds a sweet tangy flavour that really makes the eggs pop in flavour!

The third little secret is using dill. I don’t always have fresh dill on hand but I love to use Freeze Dried Dill. It lasts forever and the flavour is spot on! 

Another little secret is picking out good bread! You have to use some good White Butter Bread! It really makes it taste fresh and delicious!

By adding diced celery for a crunch and some green onion for a good pairing makes the egg salad have texture. Although, I don’t usually add mustard it would also be another flavour addition if you feel it needs it!

Here’s a delicious recipe for an Egg Salad Sandwich using 4 eggs, Hellmann’s mayonnaise, Miracle Whip, and pickle juice:

Ingredients:

  • 4 large eggs
  • 2 tablespoons Hellmann’s mayonnaise
  • 1 tablespoon Miracle Whip
  • 1-2 teaspoon(s) sweet or dill pickle juice your choice (sweet or salty flavour)
  • 1 stalk of celery diced
  • 1 tsp. fresh or freeze dried dill 
  • 2 green onion, diced
  • Salt and pepper to taste
  • Bread slices (of your choice) I love using a white butter bread:
  • Lettuce leaves (optional)

directions:

  • Boil the Eggs:

    • Place the eggs in a saucepan and cover them with water. Bring the water to a boil, then reduce the heat and let them simmer for about 10-12 minutes. Remove from heat and transfer the eggs to a bowl of ice water to cool.
  • Peel and Mash the Eggs:

    • Once the eggs are cool, peel them and then mash the eggs with a potato masher. Add Salt & Pepper.
  • Prepare the Egg Salad:

    In a mixing bowl, combine the chopped eggs, Hellmann’s mayonnaise, Miracle Whip, and pickle juice, celery, green onion, and fresh dill. Mix well until all ingredients are evenly incorporated.

  • Assemble the Sandwiches 

  • Spread a generous portion of the egg salad mixture onto a slice of bread. If desired, add lettuce leaves and a slice of swiss cheese for extra freshness. Close the sandwich, cut and serve with a dill pickle on the side.

Classic Egg Salad Sandwich With A Twist

A Lunch Favourite! This satisfying and most delicious egg salad sandwich is easy to throw together with pantry items! Add pickle juice, celery and dill for extra goodness!
Course lunch

Ingredients
  

  • 4 large eggs
  • 2 tablespoons Hellmann's mayonnaise
  • 1 tablespoon Miracle Whip
  • 1-2 tsp. s sweet or dill pickle juice your choice (sweet or salty flavour)
  • 1 stalk of celery diced
