I have to start out by saying that my aunt Fran is the best cook! She loves food and we love cooking together. She recently shared this recipe for her Caesar Salad Dressing and WOW was a hit at my house! 

Aunt Fran has been making this recipe for generations and everyone agrees that this is some damn good Caesar Salad Dressing. I just love how she shared her recipe with me on a cue card that was written out years ago. She has all of her favourite recipes taped to the inside of her cupboard. Don’t you just LOVE that!

What do you put in your Caesar Salad? I try to keep it mainly simple: romaine, red onions, croutons, pepper and of course the dressing. If I plan to make the Caesar salad the main meal, I will add chicken to the top and garlic bread on the side. 

I have been completely obsessed with making my recipe for Greek Chicken using my vertical baking pan lately. The chicken bakes so nicely, its easy to throw together and is a really healthy way to cook chicken. I marinate boneless skinless chicken thighs for 1 hour in plain yogurt, lemon juice and spices; then place it on the baking vertical pan covered with tin foil and bake for 1-1/2 hours. I remove the foil then bake for another 1/2 hour. It comes out DELICIOUS!

Aunt Fran's Caesar Salad Dressing

Here are the ingredients and instructions to make Aunt Fran’s Caesar Salad Dressing.

Ingredients:

  • 2 cloves garlic (I use 4)
  • 3/4 cup oil
  • 1/2 tsp. garlic salt
  • 1/4 cup white vinegar
  • 1 egg
  • 1/2 cup parmesan cheese
  • 1/4 tsp. dry mustard
  • 1/4 cup white sugar

Instructions:

Mix all of the ingredients in a blender for 2-3 minutes. Place in a mason jar and it stays good for 2 weeks. 

If you are worried about using a raw egg here are some things to consider and alternatives. Using raw eggs in Caesar dressing carries a small risk of salmonella contamination. This is especially concerning for young children, the elderly, pregnant women, or those with weakened immune systems.

  1. Use pasteurized eggs: These have been heat-treated to kill bacteria while still remaining raw.
  2. Coddle the egg: Briefly immerse the egg in boiling water to lightly cook the outside while keeping the yolk raw. This helps reduce bacteria.
  3. Use mayonnaise: Many recipes substitute mayonnaise for raw egg, as it’s made with pasteurized eggs.
  4. Commercial dressings: Store-bought Caesar dressings use pasteurized eggs and are considered safe.
