Mexican Taco Wrap

1 pkg. ground chicken

1 pkg. Chorizo Sausage, casing removed

2 tbsp. Homemade Cheese Sauce (recipe below)

1 tbsp. Sour cream

Chopped green onion

Chopped tomatoes

Shredded Lettuce

Cilantro

1 pkg. large sized tortillas

1 pkg. Tostadas Charras Natural Yellow Corn Chips

Homemade Cheese Sauce For Tacos

Ingredients

  • 2 tablespoons butter

  • 2 tablespoons all-purpose flour

  • 1 cup whole milk

  • 1 cup (about 4 oz) shredded sharp cheddar cheese

  • 2 wedges Laughing Cow cheese

  • 2–3 tablespoons pickled jalapeño juice (from the jar)

  • 2 tablespoons chopped pickled jalapeños (more or less to taste)

  • 1 tsp. Chili powder

  • Salt and black pepper to taste

Instructions:

  • In a medium saucepan over medium heat, melt the butter.

  • Whisk in the flour and cook for 1–2 minutes until it forms a smooth, bubbly paste (roux), but do not let it brown.

  • Gradually whisk in the milk, ensuring no lumps form.

  • Continue whisking until the mixture thickens and coats the back of a spoon, about 2–3 minutes.

  • Lower the heat to medium-low.

  • Add the shredded cheddar a handful at a time, stirring until melted and smooth.

  • Stir in the Laughing Cow cheese until fully incorporated and the sauce is creamy.

  • Stir in chili powder, pickled jalapeño juice and chopped pickled jalapeños.

  • Taste and add salt and black pepper as needed.

  • If the sauce is too thick, whisk in a splash more milk until desired consistency is reached

Mexican Crunch Wraps

These Mexican crunchy wraps are loaded with a mouthwatering blend of seasoned ground chicken and spicy chorizo sausage and a homemade Mexican cheese sauce all wrapped up and toasted to a golden perfection.

Ingredients
  

  • 1 pkg. ground chicken
  • 1 pkg. Chorizo Sausage casing removed
  • 2 tbsp. Homemade Cheese Sauce (recipe below)
  • 1 tbsp. Sour cream
  • Chopped green onion
  • Chopped tomatoes
  • Shredded Lettuce
  • Cilantro
  • 1 pkg. large sized tortillas
  • 1 pkg. Tostadas Charras Natural Yellow Corn Chips

Method
 

  1. In a large mix the ground chicken and the chorizo (remove the casings of the sausages first). To a large skillet, brown the chicken, chorizo blend.
    To Assemble:
    Lay a tortilla down then add a heaping spoonful of meat, now add the nacho cheese sauce. Place the crunchy tortilla on top. Now add all of your toppings, sour cream, green onion, lettuce and tomato. Place another large tortilla on top.
    Fold the edges to seal into a round disc shape package. Place on a heated non stick skillet and toast until golden brown. Flip and repeat on that side. Serve.

Homemade Nacho Cheese Sauce

There is nothing better than a homemade cheese sauce. Add to crunchy tacos or overtop nachos. Its so good!

Ingredients
  

  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour

  • 1 cup about 4 oz shredded sharp cheddar cheese
  • 2 wedges Laughing Cow cheese
  • 2 –3 tablespoons pickled jalapeño juice from the jar
  • 2 tablespoons chopped pickled jalapeños more or less to taste
  • 1 tsp. Chili powder
  • Salt and black pepper to taste

Method
