Homemade Nacho Cheese Sauce

There is nothing better than a homemade cheese sauce. Add to crunchy tacos or overtop nachos. Its so good!

Ingredients
  

  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 cup whole milk
  • 1 cup about 4 oz shredded sharp cheddar cheese
  • 2 wedges Laughing Cow cheese
  • 2 –3 tablespoons pickled jalapeño juice from the jar
  • 2 tablespoons chopped pickled jalapeños more or less to taste
  • 1 tsp. Chili powder
  • Salt and black pepper to taste

Method
 

  1. In a medium saucepan over medium heat, melt the butter.
  2. Whisk in the flour and cook for 1–2 minutes until it forms a smooth, bubbly paste (roux), but do not let it brown.
  3. Gradually whisk in the milk, ensuring no lumps form.
  4. Continue whisking until the mixture thickens and coats the back of a spoon, about 2–3 minutes.
  5. Lower the heat to medium-low.
  6. Add the shredded cheddar a handful at a time, stirring until melted and smooth.
  7. Stir in the Laughing Cow cheese until fully incorporated and the sauce is creamy.
  8. Stir in chili powder, pickled jalapeño juice and chopped pickled jalapeños.
  9. Taste and add salt and black pepper as needed.
  10. If the sauce is too thick, whisk in a splash more milk until desired consistency is reached
