I love goat cheese and use it mostly on salads. I especially love Honey Goat Cheese which may be a little more challenging to find. If you are in Canada, you can find the honey goat cheese at Metro Grocery Stores.

Here are the ingredeints that you will need to make this appetizer:
Ingredients:
For the Whipped Goat Cheese Dip:
- 8 oz goat cheese
- 4 oz cream cheese, softened
- 2 tablespoons heavy cream
- 1 tablespoon olive oil
- Salt and freshly ground black pepper, to taste
For the Pesto:
- 1 cup fresh basil leaves
- 1/4 cup pine nuts (or walnuts)
- 1/4 cup grated Parmesan cheese
- 1-2 garlic cloves
- 1/4 cup extra virgin olive oil
- Salt and freshly ground black pepper, to taste
For the Stewed Strawberry Topper:
- 1 cup fresh strawberries, hulled and quartered
- 1 tablespoon honey
- 1 tablespoon balsamic vinegar
- 1 teaspoon lemon juice
- Pinch of salt

1. Make the Whipped Goat Cheese Dip:
- In a food processor, combine the goat cheese, cream cheese, heavy cream, and olive oil.
- Blend until smooth and creamy.
- Season with salt and pepper to taste.
- Transfer to a serving bowl and set aside.
2. Prepare the Pesto:
- In a food processor, combine the basil leaves, pine nuts, Parmesan cheese, and garlic cloves.
- Pulse until the mixture is finely chopped.
- With the processor running, slowly drizzle in the olive oil until the pesto is smooth and well combined.
- Season with salt and pepper to taste.
- Set aside.
3. Prepare the Stewed Strawberry Topper:
- In a small saucepan, combine the strawberries, honey, balsamic vinegar, lemon juice, and a pinch of salt.
- Cook over medium heat, stirring occasionally, until the strawberries are softened and the mixture is slightly thickened, about 10-15 minutes.
- Remove from heat and let cool to room temperature.
4. Assemble the Dip:
- Spread the whipped goat cheese dip evenly in the serving bowl.
- Spoon the pesto over the center of the goat cheese dip.
- Add the stewed strawberries on top of the pesto.
5. Serve:
- Serve the dip with crackers, sliced baguette, or fresh vegetables.
