Instant Pot Baked Apple Crisp

A quick and easy dessert using your instant pot. This instant pot baked apple recipe is full of fall flavours. Make a well in the apple and stuff it with brown sugar, raisins, vanilla and a small amount of rum. Bake quick, add some vanilla ice cream while its still warm. It is wonderful!

- 4 medium-sized baking apples such as Granny Smith, Honeycrisp, or Braeburn
- 3/4 cup brown sugar
- 1-2 tsp. ground cinnamon
- 1/4 teaspoon ground nutmeg optional
- 2 tablespoons unsalted butter diced
- 1/2 cup golden raisins
- 3/4 cup apple cider apple juice or water
Mix the Filling:
In a small bowl, combine the brown sugar, cinnamon, and nutmeg.

Stuff the Apples:
Divide the filling mixture evenly among the hollowed-out centers of the apples, pressing down gently to pack the filling.
Place in the Instant Pot:
Pour the apple juice or water into the bottom of the Instant Pot.
Place a trivet inside the Intant pot.
Arrange the stuffed apples upright in the Instant Pot, ensuring they are not touching the sides.
Cook in the Instant Pot:
Close the Instant Pot lid and set the valve to the sealing position.
Select the "Manual" or "Pressure Cook" setting and adjust the time according to your desired level of softness (see the timing suggestions in the previous response). I feel like 7-9 minutes is the golden timeframe.
Once the cooking time is complete, allow for a natural release.
Serve:
Carefully remove the baked apples from the Instant Pot using tongs or a slotted spoon.
Pour that delicious caramel sauce into a measuring cup.
Serve the baked apples warm as they are or with a scoop of vanilla ice cream, a dollop of whipped cream, and a drizzle of caramel sauce.
