Homemade Oatmeal Raisin Cookies

Brown sugar, cinnamon, and a generous helping of raisins make these oatmeal cookies soft, chewy and so delicious!

Ingredients
  

  • 1-1/2 cups flour
  • 1 tsp. Baking soda
  • 1 tsp. Baking powder
  • 1/2 tsp. Salt
  • 2 tsp. cinnamon
  • 1 cup butter or 2 sticks
  • 3/4 cup light-brown sugar
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 tsp. Vanilla extract
  • 2 cups rolled oats
  • 2 cups raisins

Instructions
 

  • Preheat oven to 350 degrees. In a medium bowl whisk together flour, baking soda, baking powder, salt and cinnamon. Set aside
  • With an electric mixer, cream butter and sugars until light and fluffy. Beat in the eggs and vanilla. Add the flour mixture, beat just until combined. Add oats, and raisins and stir until well combined.
  • Use a cookie scoop or spoon to drop rounded balls of dough onto the prepared baking sheet, leaving about 2 inches of space between each cookie.
  • Bake until cookies have spread and are golden brown and soft to touch, 18-20 minutes, rotating sheets halfway through. Cool on the cookie sheet for 5 minutes then transfer the cookies to a wire rack and continue to cool completely.
