Hamptons-Inspired Heirloom Cauliflower

This Hamptons-inspired whole roasted cauliflower. Sprinkled with blackened seasoning, boiled until tender, then roasted until caramelized. Drizzle with homemade caesar yogurt sauce then topped with fresh cilantro. Serve whole with and extra yogurt sauce for dipping.

Ingredients
  

  • 1 whole medium-size fresh cauliflower covered with leaves
  • Olive oil for brushing
  • 1 tsp. Granulated garlic
  • 1 tbsp. Chef Paul Blackened Redfish Magic Seasoning Blends
  • Salt & pepper
Homemade Caesar-Inspired Yogurt Sauce
  • 1/2 cup plain Greek Yogurt
  • 1/4 cup mayonnaise
  • 1/4 cup dijon mustard
  • 1 clove garlic minced
  • 1 tsp. Maple Syrup
  • 1/2 lemon juiced
  • 1/4 cup extra-virgin olive oil
  • Fresh pepper

Method
 

  1. Preheat the oven to 400 F.
  2. Place the cauliflower in a metal pot and fill until 3/4 full of water. Add salt.
  3. Cover with a lid, bring to a boil, lower to a moderate boil and cook for 10 to 15 minutes, depending on the size of the cauliflower.
  4. Drain.
  5. Brush the cauliflower with olive oil and sprinkle with a little salt and pepper, garlic powder and blackened seasoning.
  6. Place in a baking dish in the centre of the oven, and bake until the top turns golden brown (about 60 minutes).
  7. The outside of the cauliflower should be crisp and the inside as soft a butter.
  8. Serve with the caesar-inspired yogurt sauce, sprinkle with cilantro and stake it with a knife for the fancy look
