Sweet Potato Chickpea Stew Recipe

This stew is packed with healthy ingredients. Made with sweet potatoes, chickpeas, red lentils, curry powder and more. It is a hearty stew that is full of flavour and warms the soul.
- 2 tbsp. olive oil
- 1 large onion chopped
- 4 garlic cloves minced or 2 tbsp. garlic puree
- 1 inch fresh ginger grated or 1 tbsp. ginger puree
- 2 large sweet potatoes peeled and cut into small cubes
- 1/2 cup water
- 1 small can 250 ml chickpeas
- 1/2 cup red lentils
- 8 cups vegetable stock
- 1 cup chopped grape tomatoes
- handful of spinach
- 1 tbsp. curry powder
- 1/2 tsp. all spice
- 1/2 tsp. cinnamon
- 1/2 tsp. coriander
- Salt & pepper to taste
- squeeze of fresh lemon
- 1/2 cup coconut milk optional
Heat olive oil over medium heat.
Add onions and cook for 3-5 minutes or once the onions starts turning a slightly golden.
Stir the sweet potatoes into the onions. Add 1/2 cup water and place a lid on the pot. Let everything sweat for 5 minutes.
Remove the lid and add in the spices, garlic and ginger, salt and pepper. Toast the spices for 1 minute.
Now add in the chickpeas, red lentils, tomatoes, and vegetable stock. Slightly cover the lid and simmer for at least 20 minutes.
Remove the lid, add in spinach, coconut milk, and a squeeze of lemon juice.
Serve with a toasted baguette.
