Fresh Corn & Mango Salsa Recipe

Fresh & Light Corn & Mango Salsa is so fresh, sweet and zesty making this a perfect summer salad! Make this salad quick and serve with nacho chips! Enjoy!

Ingredients
  

  • 4 Cobs of Corn, cooked and cut off the cob
  • 1 Ataulfo Mango, Diced
  • 1 Red Pepper, Diced
  • 1 Jalapeno, Diced
  • 2 Green Onions, Chopped
  • 1 cup Grape Tomatoes, Diced
  • 1 Avocado, Diced
  • 1 Can Black Beans
  • 1 tbsp. Fresh Herbs, Cilantro, Basil, or oregano
  • 1 Lime, Juiced
  • 1 1/2 tbsp. Agave Nectar or Honey
  • 1/4 cup Olive Oil
  • 2 tsp. Garlic Powder
  • 1/2 tsp. White Pepper
  • Salt & Pepper to taste

Instructions
 

  • MIx all of the ingredients together in a large bowl including the seasonings.
    To Make the dressing: Mix the Agave, and Lime juice. Add to the salad. pour over the desired amount of olive oil. Stir and taste to adjust the seasonings.
    Serve with nachos and enjoy!
