Easy Oven Baked Home Fries Recipe

The secret to making these easy oven baked home fries is to blanch, shake and bake. Easy like 1-2-3. Makes a wonderful healthy side dish.

Ingredients
  

  • 5 cups water
  • 4 cups chopped potatoes into bite sized pieces
  • 3 bay leaves
  • 3 cloves garlic
  • 1 tbsp. Salt
  • 3 tbsp. olive olive oil
  • 2 tsp. garlic powder

Instructions
 

  • Preheat the Oven: Preheat your oven to 400°F
  • Blanch the Potatoes: Bring a large pot of water to a boil. Add the diced potatoes to the boiling water and let them cook for about 10-12 minutes, just until they start to soften slightly. This blanching step helps to partially cook the potatoes and ensures they become crispy on the outside while remaining tender on the inside.
  • Drain and Dry: Drain the potatoes in a colander and let them air dry for 3-4 minutes
  • Shake and Season: In a large bowl, combine the blanched potatoes, olive oil, garlic powder, salt, and black pepper. Toss everything together until the potatoes are evenly coated with the seasoning mixture.
  • Spread on a Baking Sheet: Arrange the seasoned potatoes in a single layer on a large baking sheet lined with parchment paper. Make sure the potatoes are spaced apart to allow for even baking and crispiness.
  • Bake in the Oven: Place the baking sheet in the preheated oven and bake for 25-30 minutes, or until the home fries are golden brown and crispy on the outside, flipping them halfway through the baking time for even cooking
