The Best Ever Asian Kale Crunch Salad

This kale salad is so unique, finely chopped kale with cabbage, peanuts, peppers, green onion and carrot all tossed into a roasted peanut dressing.

Ingredients
  

For The Salad

  • 1 bunch of Kale chopped
  • 1/4 head of cabbage shredded and chopped
  • 1 red pepper finely chopped
  • 2 green onions chopped
  • 1 carrot shredded
  • 1/2 cup chopped nuts: peanuts or cashews
  • 1 red serrano optional

For the Dressing

  • 1/4 cup creamy natural peanut butter or cashew butter
  • 3 tbsp. rice vinegar
  • 2 tbsp. honey
  • 1-2 tbsp. tamari
  • 1 tsp. garlic powder
  • 1/2 tsp. sesame oil
  • 1/4 cup canola oil
  • salt & pepper

Instructions
 

For the Salad

  • To begin, roughly chop the kale and cabbage before placing it the food processor.
  • Add the Kale and Cabbage to the food processor and chop until very fine consistency.
  • Add the red pepper, chopped nuts, green onions, shredded carrots and serrano peppers.

For the Dressing

  • Whisk the peanut butter, rice vinegar, honey, tamari or soy sauce, garlic powder, sesame oil, salt and pepper.
  • Mix the dressing into the kale salad and enjoy!
