Crispy Sweet Potato And Zucchini-Scallion Fritter Appetizer

A delicious easy vegetarian appetizer made with sweet potatoes, zucchini and green onion and topped off with honey goat cheese and a smoky olive.

Ingredients
  

  • 2 cups shredded zucchini squeezed
  • 1 1/4 cup shredded sweet potatoes
  • 2 scallions finely chopped
  • 1 tbsp. all-purpose flour
  • 1 egg beaten
  • 1 tsp. salt
  • 1 tsp. pepper
  • 1 tsp. old bay seasoning
  • 1 tsp. agave nectar or honey
  • 3 tbsp. olive oil
  • 1/3 cup crumbled honey goat cheese
  • 4 smoky grilled green olives

Instructions
 

  • Mix sweet potato, zucchini, green onion, flour egg, Old Bay seasoning, agave nectar, salt and pepper all together.
  • Heat oil in a frying pan over medium heat. Working in batches, drop heaping teaspoonfuls of mixture into the hot oil. Use the back of the spoon to flatten them into thin pancakes.
  • Cook turning once, until crisp and golden on each side, 5 minutes per side.
  • Drain on paper towels. Cool to room temperature before topping.
  • Top with honey goat cheese and an olive cut in half. Enjoy!
