The Ultimate Mexican Street Corn Recipe

Fire up the grill for our mouth-watering street corn recipe! Charred corn slathered in a tangy sauce, sprinkled with spices & finished with a lime squeeze

Ingredients
  

  • 6 ears of corn husked and cleaned
  • 1/2 lime
  • 1/2 cup of mayonnaise
  • 1 tbsp. chipotle pepper sauce
  • 1 tsp. chili powder
  • 1/2 tsp. tajin seasoning
  • 1/2 cup of grated Parmesan cheese
  • Salt and pepper to taste

Instructions
 

  • Boil the corn: Fill a large pot with water and bring it to a boil. Add the corn and let it cook for 5-7 minutes, until tender.
    Grill the corn: While the corn is boiling, preheat your grill to medium-high heat. Remove the corn from the pot and pat it dry. Brush the corn with olive oil, salt and pepper.
    Mix the sauce: In a small bowl, mix together the mayonnaise, tajin, chipotle sauce, lime juice, chili powder, salt, and pepper.
    Coat the corn: Using a brush or spoon, coat the grilled corn with the sauce mixture. Sprinkle the grated Parmesan cheese on top of the corn.
    Serve and enjoy: Serve the Mexican street corn hot off the grill and enjoy as a delicious appetizer or side dish!
    Tip: For a twist, you can also add chopped fresh cilantro or green onions to the sauce mixture. And if you don't have a grill, you can also broil the corn in the oven for a similar charred effect
    Grill the corn, turning until all the sides are slightly charred on all sides. Remove from the grill.
