Fire up the grill for our mouth-watering street corn recipe! Charred corn slathered in a tangy sauce, sprinkled with spices & finished with a lime squeeze

- 6 ears of corn husked and cleaned
- 1/2 lime
- 1/2 cup of mayonnaise
- 1 tbsp. chipotle pepper sauce
- 1 tsp. chili powder
- 1/2 tsp. tajin seasoning
- 1/2 cup of grated Parmesan cheese
- Salt and pepper to taste
Boil the corn: Fill a large pot with water and bring it to a boil. Add the corn and let it cook for 5-7 minutes, until tender.Grill the corn: While the corn is boiling, preheat your grill to medium-high heat. Remove the corn from the pot and pat it dry. Brush the corn with olive oil, salt and pepper.Mix the sauce: In a small bowl, mix together the mayonnaise, tajin, chipotle sauce, lime juice, chili powder, salt, and pepper.Coat the corn: Using a brush or spoon, coat the grilled corn with the sauce mixture. Sprinkle the grated Parmesan cheese on top of the corn.Serve and enjoy: Serve the Mexican street corn hot off the grill and enjoy as a delicious appetizer or side dish!Tip: For a twist, you can also add chopped fresh cilantro or green onions to the sauce mixture. And if you don't have a grill, you can also broil the corn in the oven for a similar charred effectGrill the corn, turning until all the sides are slightly charred on all sides. Remove from the grill.
