Baked Spaghetti Squash with Feta and Tomatoes Recipe

This all-in-one meal is easy to make, healthy and bursting with falvour. Squash, tomatoes, basil and feta all baked together for a delciious tasty bite!

Ingredients
  

  • 1 spaghetti squash
  • 1-2 pint s cherry tomatoes, halved
  • 2- wedges of crumbled feta cheese
  • 2 green onions thinly sliced
  • 1 small shallot
  • 1-2 tsp. puree garlic
  • 1/4 cup chopped fresh basil
  • 2 tsp. sugar
  • 3 tbsp olive oil
  • Salt and pepper to taste
  • Balsamic Glaze optional

Instructions
 

  • Preheat the oven to 400°F.
  • Cut the spaghetti squash in half lengthwise and scoop out the seeds.
  • Brush the flesh side of the squash with olive oil and season with salt and pepper.
  • In a small bowl, mix the diced tomatoes, green onions, garlic, shallot, fresh basil, and a tiny bit of sugar.
  • To Assemble: Place a wedge of feta in each of the hollowed-out squash pieces. Pour the tomato mix over the feta cheese on both halves of the squash. drizzle with oil and sprinkle a bit more salt and pepper.
  • Bake in the oven for 1 hour to 1 hour and fifteen minutes.
  • Using a fork, scrape the flesh of the squash into spaghetti-like strands while mixing the tomatoes and flavourings all together within the squash.
  • Drizzle a balsamic glaze and Enjoy!
