Preheat the oven to 400°F.
Cut the spaghetti squash in half lengthwise and scoop out the seeds.
Brush the flesh side of the squash with olive oil and season with salt and pepper.
In a small bowl, mix the diced tomatoes, green onions, garlic, shallot, fresh basil, and a tiny bit of sugar.
To Assemble: Place a wedge of feta in each of the hollowed-out squash pieces. Pour the tomato mix over the feta cheese on both halves of the squash. drizzle with oil and sprinkle a bit more salt and pepper.
Bake in the oven for 1 hour to 1 hour and fifteen minutes.
Using a fork, scrape the flesh of the squash into spaghetti-like strands while mixing the tomatoes and flavourings all together within the squash.
Drizzle a balsamic glaze and Enjoy!
