Stuffed peppers are the ultimate comfort food – the scent of them baking in the oven and you’ll feel like you’re wrapped in a warm, delicious hug straight from grandma’s kitchen. Growing up, stuffed peppers were our family’s ultimate comfort food. A visit to my grandma’s house when she had stuffed peppers in the oven is the ultimate memory of home and comfort with a big hug.
This recipe is a mix of my grandma’s recipe and my aunt Fran’s secret tomato sauce combined. My Aunt Fran is an amazing cook and makes an awesome Caesar Salad Dressing that is always a hit in our house.
This recipe for stuffed peppers is simple, delicious and guaranteed to make everyone at the table happy.

I also like to mention here that I love to use Aluminum Foil Pans for this recipe. I find they are the perfect size pan to keep the peppers nice and cozy together. I buy a case of these pans and have them on hand all the time for a quick grab.
One ingredient that I like to use here for this recipe is a all purpose spice called Vegeta Seasoning. It is a well rounded seasoning salt that really lifts the taste of your recipe and adds enough salty taste to balance the meat.
I also like to use red peppers for this stuffed pepper recipe because I find they are sweeter in taste and more tender than the traditional green pepper. However, you can use whatever colour pepper that you prefer.
How To Core A Pepper Like A Pro
Coring a pepper doesn’t have to be complicated or messy. Start by washing your pepper thoroughly, then slice off the top about 1/2 inch from the stem, creating a little “lid”. Using a sharp paring knife, carefully cut around the inner membrane, keeping the pepper’s structure intact. Gently pull out the core and seeds, rotating the pepper to remove any remaining seeds. Pro tip: Hold the pepper upside down and tap it to release stubborn seeds. For extra precision, use a small spoon to scrape out any remaining seed membrane, ensuring a clean interior perfect for stuffing.
Ingredients:
- 8-10 bell peppers
For the Filling:
- 1-1/2 lbs. ground beef or ground chicken
- 1-2 onions diced
- 1 tsp. garlic powder
- 1 tsp. onion powder
- 1-2 tsp. Vegeta Seasoning (or Seasoned Salt)
- 1/2 cup of the sauce (see below)
- 1/2 cup arborio rice
- 1 tsp. salt
- 1 tsp. pepper
- Shredded cheese (optional)
For the Sauce:
- 2 small cans Campbell’s Tomato soup
- 2 lemons juiced
- 3/4 cup brown sugar
- 1 can Whole tomatoes
- 1 tsp. Smoked Paprika
- Dash of cinnamon
- Salt and pepper to taste
Instructions:
- Preheat oven to 350°F
- Prepare your peppers
- Sauté onions until translucent. Let cool
- Make the sauce: Mix together the tomato soup, juice from 2 lemons, and brown sugar. Add in smoked paprika and a dash of cinnamon. Whisk together and set aside.
- To a large bowl, add the ground meat, garlic powder, onion powder, Vegeta Seasoning, sautéed onions, rice, and whole tomatoes. Add 1/2 cup of the tomato sauce, salt & pepper. Using a fork, mix everything together and break up the tomatoes at the same time so that is creates a smooth mix.
- Add a couple spoonfuls of the tomato sauce to the bottom of a rimmed baking pan.
- Stuff each of the peppers and place them into the baking dish.
- Pour the rest of the sauce over top of the peppers. Cover with the aluminum foil
- Bake for 1 hour covered. Remove the foil after 1 hour and place shredded cheese on top of each pepper. Continue to bake for another 20 minutes or until desired doneness.
