I just finished making this delicious and super easy penne pasta bake and I just need to get this written down because its a keeper recipe! I love that the entire meal is made in one pot so there is very little mess! There is no need to boil the pasta, we are literally going to dump everything that tastes good into an oven safe baking pan and bake for 40 minutes. The result is incredible and it will seem like you were over a hot stove for hours! Trust me, this one is easy and so good!
So grab yourself a box of penne pasta, your favourite pasta sauce (I love Rao’s or Marinelli), some ricotta cheese, fresh mozzarella and some fresh basil and lets make this together!
I love to serve this quick meal on a busy weeknight! I will make my Mediterranean Salad and some garlic bread. Dinner is served!
Good Ingredients Makes a Better Dish!
I am a big believer of using fresh good ingredients any time you can. Fresh is best! So for this recipe I love to saute a bit of onion, garlic and parsley first before adding the sauce and then topping it with some freshly sliced mozzarella, and fresh basil.
I love foodie shopping and finding good pasta sauces. My favourite sauces that I have found in my grocery travels has been: Rao’s Pasta Sauces, and Marinelli Pasta Sauce.
Ingredients:
Here’s a list of the ingredients that you will need to make this no-boil penne pasta.
- 1 package uncooked penne pasta
- 1 (26-oz) jar of marinara sauce, (Rao’s or Marinelli Sauce)
- 2-1/2 cups vegetable stock
- 1 onion, diced
- 2 cloves garlic minced
- 2 tbsp. Fresh parsley
- 1 (15-oz) container ricotta cheese
- 1 cups shredded mozzarella cheese
- Sliced Fresh Mozzarella
- 1 tbsp. Butter
- 2 tbsp olive oil
- 1 tsp dried oregano
- Salt and pepper to taste
- Fresh basil leaves, chopped (about 1/4 cup)
Instructions:
Step 1: Preheat Oven
Preheat your oven to 375°F (200°C).
Step 2: To a heavy pot over medium heat, add the olive oil and butter. Saute onions, for 3-5 minutes. Add in your garlic, parsley, and dried spices, italian seasoning, oregano and cook for an additional minute.
Step 4: Now add in the pasta sauce, vegetable stock, penne pasta, ricotta cheese and shredded mozzarella cheese. Mix everything together.
Step 6: Cover and Bake for 40 minutes.
Remove the lid after 40 minutes and give it a little mix. Place your fresh mozzarella and fresh basil on top. Place the pan back into the oven for an addition 5 minutes.
Step 9: Serve
Let the pasta bake rest for a few minutes before serving. Enjoy with a side of garlic bread or a salad for a complete meal.
