Homemade Tomato Soup

Quick & Easy Tomato Soup! Great for a healthy Lunch.

Ingredients
  

  • 1 Shallot, finely chopped
  • 2 Garlic cloves, minced
  • 1 tsp. Italian Seasoning
  • 1/2 tsp. 1/2 tsp Red pepper flakes
  • 1 Bay Leaf
  • 2-3 tbsp. Butter
  • 1/4 cup Flour
  • 1 750ml. can Heinz Tomato Juice
  • Grated Nutmeg
  • Brown Sugar as needed, if you find it bitter tasting
  • 1/2 tsp. Vegetable soup base
  • Chopped Fresh Basil
  • Salt & Pepper To taste

Instructions
 

  • Directions:
    Over Medium heat melt the butter. Add in Shallots, and cook for approximately 3 minutes then add your garlic, Italian Seasoning, and Red Pepper flakes. Cook together for another minute. 
    Add Flour. Whisk for approximately 1-1/2 minutes to cook out the flour taste. 
    Add tomato Juice, water/cream mix Grated nutmeg, and vegetable soup base. Stir until thickened. Add Bay leaf and simmer for approximately 10 minutes. Season with Salt & Pepper to taste. You may also want to add a little bit of brown sugar if you find it too bitter tasting. When you are ready to serve, add in your chopped fresh basil and parsley.
