Homemade Peanut Butter Cookie Recipe

This delicious homemade peanut butter cookie is a classic recipe with a slight twist! Add in Vanilla Sugar for a secret twist. This one ingredient will take your peanut butter cookie to the next level!

Ingredients
  

  • 1/2 cup butter
  • 1 cup peanut butter
  • 1/2 cup brown sugar
  • 1/2 cup sugar
  • 1 packet vanilla sugar
  • 1 1/2 cup flour
  • 3/4 tsp. baking powder
  • 1/2 salt
  • 1 egg
  • 1 1/2 tsp. vanilla extract

Instructions
 

  • Preheat the oven to 375 degrees.
  • To a mixer, add butter and peanut butter. Blend until just incorporated.
  • To a separate bowl, add flour, baking powder and salt. Whisk until nicely blended and then pass it through a fine sieve if you would like but not entirely necessary,
  • Now add in the sugars and the vanilla essence packet. Blend really good. I like to blend for at least 2 minutes. Add in egg, and vanilla extract and continue to blend.
  • Add your flour into the sugar mixture all at once and blend until just incorporated. Do not over mix at this point.
  • Line 2 baking sheets with parchment paper.
  • I like to use a cookie scooper because it makes a perfect cookie every time! Using a cookie scooper, create a ball. Roll the peanut butter cookie dough with your hands into a soft ball and place them on the cookie sheet.
  • Press each cookie using a fork and pressing in two directions. You may need to press your fork into a tiny bit of flour before pressing the cookie to avoid sticking.
  • Bake in the oven for 9-11 minutes or until golden around the edges.
  • Allow the cookies to cool on a rack before serving.
  • *These cookies freeze amazing! I place them into freezer Zip Loc Bags.
