Preheat the oven to 375 degrees.
To a mixer, add butter and peanut butter. Blend until just incorporated.
To a separate bowl, add flour, baking powder and salt. Whisk until nicely blended and then pass it through a fine sieve if you would like but not entirely necessary,
Now add in the sugars and the vanilla essence packet. Blend really good. I like to blend for at least 2 minutes. Add in egg, and vanilla extract and continue to blend.
Add your flour into the sugar mixture all at once and blend until just incorporated. Do not over mix at this point.
Line 2 baking sheets with parchment paper.
I like to use a cookie scooper because it makes a perfect cookie every time! Using a cookie scooper, create a ball. Roll the peanut butter cookie dough with your hands into a soft ball and place them on the cookie sheet.
Press each cookie using a fork and pressing in two directions. You may need to press your fork into a tiny bit of flour before pressing the cookie to avoid sticking.
Bake in the oven for 9-11 minutes or until golden around the edges.
Allow the cookies to cool on a rack before serving.
