Simply Fresh Mediterranean Salad

A Fresh Mediterranean Salad to get on the table quick. Add hummus, falafel, and Lebanese garlic spread to really take it to the next level of flavours
Servings 4 people

Ingredients
  

For the Salad

  • 1 head Romaine chopped
  • 1 cup Cucumber diced
  • 1 cup Tomatoes diced
  • 1/2 cup sliced red cabbage
  • 1 red pepper diced
  • 2 radishes sliced thin
  • 1/4 cup red onion
  • 1/4 cup fresh parsley chopped
  • 1/2 cup feta cheese crumbled
  • Store bought hummus
  • Store Bought Falafel cook according to the package
  • Lebanese Garlic Spread
  • Pita Bread for the side optional

For the Salad Dressing

  • 1 tsp. salt
  • 1 tsp. sugar
  • 1 tsp. red wine vinegar
  • 1 tsp. fresh lemon juice
  • 1 garlic clove minced
  • 1 tsp. dried mint
  • 1 tsp. dried oregano
  • 1 tsp. sumac
  • 1/4 cup olive oil
  • pepper

Instructions
 

  • Start by dissolving the salt and sugar into the vinegar. Add all of the other ingredients and whisk in the olive oil. Add Pepper and adjust if necessary.
  • Add all of the salad ingredients to a bowl and toss with the salad dressing.
  • To plate: spread some hummus along one portion of the bowl. Add the salad, and the falafel. Add a spoonful of the garlic spread on the side and serve with a wedge of a pita.
