Simply Fresh Mediterranean Salad

A Fresh Mediterranean Salad to get on the table quick. Add hummus, falafel, and Lebanese garlic spread to really take it to the next level of flavours
For the Salad
- 1 head Romaine chopped
- 1 cup Cucumber diced
- 1 cup Tomatoes diced
- 1/2 cup sliced red cabbage
- 1 red pepper diced
- 2 radishes sliced thin
- 1/4 cup red onion
- 1/4 cup fresh parsley chopped
- 1/2 cup feta cheese crumbled
- Store bought hummus
- Store Bought Falafel cook according to the package
- Lebanese Garlic Spread
- Pita Bread for the side optional
For the Salad Dressing
- 1 tsp. salt
- 1 tsp. sugar
- 1 tsp. red wine vinegar
- 1 tsp. fresh lemon juice
- 1 garlic clove minced
- 1 tsp. dried mint
- 1 tsp. dried oregano
- 1 tsp. sumac
- 1/4 cup olive oil
- pepper
Start by dissolving the salt and sugar into the vinegar. Add all of the other ingredients and whisk in the olive oil. Add Pepper and adjust if necessary.
Add all of the salad ingredients to a bowl and toss with the salad dressing.
To plate: spread some hummus along one portion of the bowl. Add the salad, and the falafel. Add a spoonful of the garlic spread on the side and serve with a wedge of a pita.
